Freezable Grab & Go Sausage Egg Roll – Easy Low Carb Breakfast

The egg wrap has been a lifesaver low carb recipe for me.  I use them to substitute for noodles, tortillas and crepes. Recently my lovely sister in law told me she makes them with sausages and I thought what a great idea! So today, thanks to Linda, I am making this low carb sausage egg roll. They are very simple and I like that you can freeze them for a quick grab & go breakfast. And they are only 1.8g net carbs per roll!

How To Make An Egg Wrap

The egg wrap is very easy. It’s just a beaten egg. That’s it. You want to heat up a small omelet pan that has been sprayed with cooking oil. You also want to heat up a large pan and spray that as well. Beat your egg (just 1) and pour into the small pan. Swirl the egg around to coat the whole pan. Then when it’s almost cooked but the top is still loose, flip it into the larger pan. Sprinkle cheddar cheese (for this recipe) and once it’s melted, slide it onto a plate.

How To Use Low Carb Egg Wraps

As I mentioned above you can use plain egg wraps to substitute for:

  • noodles – check out this egg noodle with meat sauce recipe to see what it looks like. Just make a few and then cut them into thick “noodles”. Top with a hearty tomato sauce.
  • lasagna – you can use the whole wraps as a lasagna-like noodle like this low carb lasagna recipe.
  • wraps – roll up your favorite lunchmeat and fixings to make a sandwich wrap like this turkey herbed egg wrap.
  • tortillas – this breakfast burrito also is a way to use the wrap as a tortilla.
  • crepes – lastly I use these wraps as a savory crepe as in these creamy chicken crepes.

How To Freeze This Grab & Grow Breakfast

I made a few of these for when I need a quick breakfast. As you an see above I just placed them in a plastic takeout container and placed them in the freezer. However a better way would be to wrap them in some wax paper and store them in a baggie in the freezer. Then when you want one, just pop in the microwave for a minute or so and they should be ready to eat.

So this simple sausage egg roll recipe is essentially make a cheesy egg wrap and rolling up a big Italian sausage link. You can also use smaller breakfast sausage links, however you will want to use at least two per wrap. Feel free to experiment with spices in the wrap or adding fresh spinach. You can even try different flavored sausages and cheese combinations. The nutritional information for 1 roll is:

316 cals / 23.7g fat / 1.8g carbs / 21.5g protein = 1.8g net carbs

Easy Grab & Go Sausage Egg Roll (Low Carb)

If you are looking for an easy grab & go low carb breakfast, try this sausage egg roll. Using the egg as the wrapper, you can make a bunch of these and freeze for a quick breakfast. Only 1.8g net carbs each.

Ingredients

  • 2 egg, beaten
  • 1 Italian sausage link
  • ½ cup cheddar cheese, shredded

Instructions

  1. Cook the Italian sausage. When done, cut the sausage ends off and save for one of the wraps.

  2. Spray a nonstick small saute pan and a medium saute pan.  Place each on the stove and heat to medium. 

  3. Add the beaten egg to the smaller pan and swirl to fill the whole pan. 

  4. When it is almost done cooking, flip into the medium pan and sprinkle cheese over top. 

  5. Take off stove when cheese has melted. Continue with other egg to make 2 wraps. 

  6.  Fold the sides in a bit and place the larger piece of sausage on top. Roll up like an egg roll and set aside. Use the ends to make another egg roll. 

  7. To freeze you can wrap with wax paper and place in a container or baggie and place in the freezer. To reheat microwave for 1 minute or until everything is warmed through.

    Sounds like a great idea, but does it get watery upon reheating?

      Hi Andrew, it doesn’t really get watery but what I notice is that eggs when reheated do get a bit dried out. That doesn’t bother me but it may bother some. Hope that helps!
