This a fast little post today because this is a simple yet flavorful side dish. I made it for dinner a few days ago and I was pleasantly surprised at how good it turned out. We try to eat broccoli at least once a week in our house as a side dish. Everyone likes it but no one is thrilled by it. Today I thought I’d use a lemongrass paste that I bought recently. The first time I used lemongrass I got a stalk from the Strip District and thought it was the coolest thing. However today I just had the paste I bought at the grocery store but it was pretty good. I would prefer to have the fresh lemongrass but the paste was good in a pinch.
I always have some ginger in the freezer. As soon as I buy some I keep one chunk in my refrigerator and put the rest in the freezer. It’s been working out so great! Whenever a recipe calls for ginger I just pull out the frozen (if I’ve run out of the fresh) and use a microplane to grate it. It looks like shaved ice but it thaws almost instantly and it’s so easy to grate.
And of course I had to add some garlic because….well I love garlic. So on to the recipe.
Quick & Easy Broccoli with Lemongrass Ginger Garlic Butter
This is an easy one like I promised. I used some Kerry Gold butter because it’s my favorite and in this recipe the butter is a key ingredient but any butter will do. I melted two tablespoons in a pan and add 1 teaspoon each of the lemongrass, ginger and garlic. Also a pinch of salt and pepper. I cooked in on a medium heat for about 5-10 minutes. You don’t want it to brown but you want the flavors to meld. In the mean time I chopped my broccoli and steamed it in the microwave. When it was done, I drained the excess water and then just tossed with the flavored butter.
Easy peasy but very flavorful. You can’t really tell by looking at this photo but it was a very tasty dish. You’ll just have to take my word on it. I would eat this for lunch any day, as it’s so easy to make. My husband really enjoyed it too and Max didn’t really care one way or another because while he’ll eat broccoli, he doesn’t love it….yet.
I think next time I make this I will roast it. I think the flavors will be richer but in a pinch this will be our go to way to eat broccoli. All of the ingredients are full of healthy nutrients and they all taste great together. Enjoy!
Broccoli with Lemongrass Ginger Garlic Butter
- 2 heads of broccoli chopped into florets
- 1 teaspoon lemongrass paste
- 1 teaspoon crushed garlic
- 1 teaspoon grated ginger
- 2 Tablespoons butter
- salt and pepper to taste
In a small saucepan, melt your butter and then add the rest of the ingredients except the broccoli.
Meanwhile steam your broccoli florets.
When the broccoli is done, strain any excess water and mix with the flavored butter.
