I’m not much of a fruity candy lover but lately I’ve been really craving gummy candy. I’m not much into gummy bears but I love some of my vitamin gummies. So I figured out how easy it was to make them low carb and created this sugar free gummies recipe. It’s super easy and you can make any flavor you want!
These homemade gummies are a fun keto snack to grab for sweetness and a chewy texture. Plus it has gelatin which is a good source of collagen and protein. I have 2 ways to get the flavor you crave and you can make this recipe in about 10 minutes and then let them set up in the fridge for awhile.

Recipe ingredients and substitutions.
The 2 simple ingredients I used in these gummies were gelatin and sugar free drink mix sticks. These powder mixes work great because they have the sweeteners, fruit flavoring and color all in one.
You can also use sugar free jello to make gummies but I found that the drink mixes has a variety of colors and flavor options available so I ended up using them. I tell you how to use the sugar free jello too which I’ve adapted from this recipe.
- unflavored gelatin powder – I like Great Lakes unflavored beef gelatin and have used it for years. It’s unflavored, colorless, and odorless and has 11g of protein per tablespoon. It has the same benefits and collagen and which is good for skin, hair, nails, joints and digestion. And you can use it in desserts, soups, sauces and marshmallows.
- sugar free drink mix sticks – You can find these anywhere include the dollar store. I often buy them at Dollar General and I find candy flavors like the ones below. I used both the Skittle and Starburst brands for todays batch which were great for creating that sweet and tart candy flavor.
- sugar free jello mix – The only bad thing about using sugar free jello is that they only have so many flavors to pick from. The upside that you use less of the plain gelatin and it has good color and flavor.
Most of these mixes and gelatins use aspartame and not healthy sweeteners like stevia, erythritol or monk fruit. Two brands that use healthier sweeteners are Simply Desserts jello and True Citrus drink mixes.
You can also use fruit juice and unflavored gelatin to make an even more healthy version but you will need to use some type of sweetener (honey, syrup, etc) and something for the sourness like citric acid or lemon juice. I’m sure there are good recipes out there for you.

The best kind of molds to use.
The best kind of molds to use for these gummies and candy in general are silicone based ones. It makes it so much easier to pop them out be it the gummies we are making today or even chocolates. I have a bunch of keto chocolate candy recipes on this site so check those out too.
I bought the red and green molds at Aldi and if you have one near you go and grab them now. They are great quality and even have a lid which is really useful. I think they are for ice cubes but they work beautifully.
However there are plenty online and I found these cute gummy bear molds and candies. But you can often find some at the dollar store during festive seasons.
I have a big collection but the brown one below is one of my favorite candy molds. It make a nice size treat and I like the design. Plus it’s really easy to get the pieces out.

How to make sugar free gummies.
Note these gummies are chewy in texture but not as hard as gummy bears. You have to use glucose or corn syrup to achieve that texture and I just wanted to keep this recipe as simple as possible.
Step 1: Get out a small saucepan and add the cold water, gelatin and drink mix powder. Heat to medium heat and whisk to combine. Cook for a few minutes until the gelatin dissolves and it thickens a bit. This really should just take about 2-3 minutes.

Step 2: Next pour the mixture into the silicone gummy mold. The amount it makes will depend on the size of the cavities in the molds. Each batch made about 10-13 pieces for me.

Step 3: Let them come to room temperature then place the gummy mold in the refrigerator until they complete set up. This should take between 30-40 minutes. The gummies should come out easily if you are using a silicone mold.
NOTE: If your molds are too bendable you will want to put a plate or something sturdy underneath them so they don’t spill as you transfer them to the refrigerator. I ended up using the lid from the Aldi molds for the brown one.
And that is all there is to it. Pop them out of the molds and then place the keto gummies in an airtight container in the refrigerator. They should last for 1-2 weeks in the refrigerator. Please scroll down to view the printable recipe card.

NOTE: You have to store these keto gummies in the refrigerator as they are not shelf stable. There are ways to make them shelf stable but it involves a little more complicated process and additional ingredients. I just intended this recipe to be a quick and easy keto candy recipe.
If you want to use sugar free jello.
You would make this the same way as above but the quantities are different.
Pour 1 packet of the 0.3 oz box of sugar free gelatin powder with about 2 teaspoons of unflavored gelatin and ⅓ cup of water into a saucepan. Whisk together over medium heat and when the gelatin has dissolved and the mixture has thicken a bit, pour into molds and refrigerate like the other recipe.
