My husband has become an awesome smoker. I’ve had his smoked turkey, brisket and salmon on the blog here and we eat these dishes regularly. The only problem is that you really have to be home all day to make these things. The other day I was in the mood for smokey barbecue and decided to try it in the slow cooker. I put a rub on a  pork shoulder along with some liquid smoke and set it in the slow cooker to cook all day. It was so good. The salty, spicy pork was just like what we eat in the summer and I was able to do it in the slow cooker!

I used the same rub as I did my barbecue burgers except I added a bit of Swerve sweetener and some liquid smoke. I just made a paste with the ingredients and rubbed it in all the nooks and crannies of this roast. Then I set it in the slow cooker and went about my day. A note on the liquid smoke. I just used 1 tablespoon of liquid smoke and it had a hint of smoke. If you would want it really smokey add a bit more.

The secret to getting it nice and crusty is baking it in the oven for 25 – 30 minutes after the slow cooker. You don’t need to do this, I just love that crusty outside and this is the way to do it.  You can see above what it looks like right out of the oven.

Then you just shred it with two large forks and serve it with some barbecue sauce if you like. I have a low carb barbecue sauce recipe here if you are watching carbs.

I personally like just as it is. Sometimes  I even put it over lettuce and make a nice creamy dressing to go with the spicy pork. Yum!! I hope you like this as much as I did. The nutritional information for 1 serving is:

617 cals / 42.8g fat / 3.2g carbs / 2g fiber / 52.7g protein = 1.2g net carbs

Ingredients

  • 4.5 lb pork shoulder roast
  • 1 tablespoon liquid smoke
  • 1 tablespoon Swerve sweetener
  • 2 teaspoons chili powder
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • ½ teaspoon cayenne powder
  • ½ teaspoon pepper
  • 2 teaspoons salt
  • 1 teaspoon cumin

Instructions

  1. Make a paste from the liquid smoke and spices and rub all over the pork roast. If you want a more smokey taste, add another tablespoon of liquid smoke.
  2. Set in the slow cooker for 7 hours on low without any liquid.
  3. After 7 hours, take the roast out and lay on a foil covered cookie sheet and bake in a 425 degree F oven for 25- 30 minutes.
  4. Take out of oven and shred into pieces.
  5. Serve with barbecue sauce on the side.

    All I have on hand is a loin. Would that be okay?

      Hi Holly, I don’t think it would be as good. Pork loin is so lean and pork shoulder has quite a bit of fat that keeps it moist. You could try it but I’m not sure if it would work. I do think a pork tenderloin might work as it’s not as dry. Good luck!

    I love pulled pork. I do not have a smoker, but I make mine in my slow cooker all of the time, and it comes out so juicy and flavorful! I use liquid smoke too and usually just salt. I am going to try your rub next time I’m cooking pork!

    Still like the meat better from the smoker, but this was pretty good.

      This is a good winter dish when you don’t want to go out in the cold to check on your smoker. Or for those that don’t have a smoker.
