My husband and I love buffalo flavored things. Ironically I have never made nor eaten buffalo wings but I think I’ve tried everything else!
Today I was craving that spicy, tangy sauce and decided to make this keto buffalo chicken cauliflower rice. It only takes about 15 minutes and you have this very flavorful one pot meal. Best of all it’s both low carb and high protein with each serving is just 3.7 grams net carbs and 14.6 grams of protein. Plus you can freeze the leftovers so it’s great for low carb meal planning.

As I mentioned I love buffalo flavored dishes and buffalo sauce is essentially very low carb so why not! A few of my favorite buffalo sauce recipes are:

Three low carb meal prep ideas that I used in this recipe.
Two things I often have on hand are cubed, cooked chicken breast and cauliflower rice. If you have both of these items in your freezer you can throw together lots of low carb meals like this one.
- For the chicken I usually buy a rotisserie chicken, take off all the meat and freeze it, and then make bone broth with the bones. Costcos has rotisserie chickens for only $5 and they are fairly large. The other thing I do is make a batch of cubed chicken in my Instant Pot. This makes a big batch and takes little time. I
- Another chicken tip. I also have an easy slow cooker whole chicken recipe that I sometimes make. I clean off all the meat and freeze in 1 cup portions in freezer bags. Then I toss the bones in the pot and make bone broth. I freeze containers for soups and stews in the winter.
- Cauliflower rice is so easy to make. I but a big head and chop it up in a food processor until it’s rice-like. Store in the refrigerator or freeze for later. I never cook this first, just freeze raw.
How to make keto buffalo chicken cauliflower rice.
This is how to make keto buffalo chicken cauliflower rice. As I mentioned this takes little time to throw together and it’s so tasty!
- First heat up a large skillet to medium heat. Then add the butter and crushed garlic. Let the garlic get fragrant for a minute or two as the butter melts.
- Next add the hot sauce to the pan and whisk together to make the base sauce of the dish.
- Next take the raw cauliflower rice and cooked chicken and mix together with the sauce. Cover and cook for 5 minutes until the cauliflower is cooked through to your liking and the chicken has heated up.
- Lastly take off the stove, sprinkle cheddar cheese over the top and you can stick under the broiler to melt the cheese and even brown it. Or just cover with a lid and let the heat of the dish melt the cheese.
And that’s it all there is to it. Store leftovers in an airtight container. Please scroll down to view the printable recipe card. Serve with a green salad and you have a complete meal.
Above you can see what it looks like when it comes out of the oven. If you want the full buffalo chicken effect you can scatter crumbled blue cheese on top. If you are not a fan you can skip this step.
I didn’t include that in the recipe because I know not everyone likes blue cheese but if you do, I recommend just sprinkling it on top at the end.

This low carb buffalo cauliflower rice with chicken dish is a very easy and delicious one pot dinner that you can make in just 15 minutes. This is the perfect quick and easy low carb dinner or lunch and each serving has only 3.7g net carbs!
Ingredients
- 2 cups cauliflower rice, raw
- 1 cup chicken, cooked and chopped
- 4 tablespoons butter
- 2 cloves garlic, crushed
- ½ cup hot sauce
- ½ cup cheddar, shredded
Instructions

Add the butter and garlic to a large saute pan. Once the butter melts and the garlic fragrant add in the hot sauce.

Whisk everything then add in the raw cauliflower and cooked chicken. Mix it well and then cover with a lid.

Cook for 5 minutes and then take off the stove and sprinkle cheese on top.

Broil unit the cheese is melted and then it’s ready to eat!
