Sometimes I miss sandwiches on a low carb diet. Quite honestly I don’t eat them often but lately my son has been loving a local Italian grocery store sub sandwich. They always look so good but I don’t eat bread very often and felt I should make my own version.
A couple weeks ago I made a Thai shrimp keto spring roll using collard greens and thought they would be the perfect vehicle for any sandwich toppings. So today I’m sharing with you my keto collard wrap sub sandwich. It was fresh, delicious and definitely low carb meal. And today I’ll show you how I made these gluten free wraps.
Why use collard greens as a sandwich wrap.
Collard greens are part of the cruciferous family of vegetables. The collard leaves are very large and edible. They have high levels of Vitamin K and A and are a good source of soluble fiber.
Collard leaves are also a natural detoxifier and the fiber is great for leaky gut problems. I like them because they make for a healthy and low carb wrap!

How to prepare collard greens for your keto sandwiches.
This is my second time using a giant collard leaf as a wrap. You can buy them in a big bunch but just need one to start with.
Step 1: Take a sharp paring knife and carefully slice part of the stem off the raw collard leaves or leaf to make it flatter. You will be slicing parallel to the surface of the cutting board. This will make it easier to rollup. I also cut a V in the bottom to get the tough stem off.
Step 2: Next take the leaf and rinse it off but don’t dry. The water will help it steam a bit. Place it in a large skillet, turn up the heat to medium and cover with a lid just for 1 or 2 minutes.
This will soften the leaf and make it more pliable. You will notice it’s nice and green and still looks fresh but not cooked.
Take off the stove and let cool before adding what ever sorts of fillings be it meats and cheeses or healthy veggies.
Low carb sandwich ingredients to use in the wraps.
I like to use all kinds of different meats, cheeses and raw veggies. I bought a tray of meats at Aldi and used provolone cheese. Like most subs I also used fresh tomatoes, red onions and some Italian dressing.
I also made a turkey club sandwich wrap with thick bacon, sliced turkey, Swiss cheese and mayo. Use whatever you wrap ingredients you like.
Some delicious spreads to try are keto hummus, horseradish sauce, roasted garlic aioli, honey mustard, hot pepper mustard, guacamole, salsa, creamy jalapeno sauce, peanut sauce etc. Here is a post with 38 keto dipping sauces for you.
How to make keto collard wraps sub sandwiches.
- First prepare the collard leaves by slicing the middle vein to make the leaf flat and cut out a v in the bottom where the hard stem is.
- Rinse the leaf but do not dry. Place in a large skillet and heat to medium. Cover and cook for 1-2 minutes just to soften the leaf a bit so you can roll them up. Now you can dry collard leaves with a paper towel if there is too much moisture.
- Stack the ingredients on the lower part of the prepared collard leaf right above where you cu the v out. I used capricola, ham, pepperoni, provolone cheese, fresh tomatoes, red onions and a bit of Italian dressing. If you want to use any type of condiment or sauce that is spreadable, add that first. For the dressing add that last because it’s so thin.
- Fold the bottom up and over the filling, then fold in the sides of the leaf inward. From there you just roll the rest of the sandwich up as tightly as possible. It’s much like wrapping up a burrito or cabbage roll. Place on a plate seam side down. Slice in half and enjoy!
Note that most veggies, meats and cheeses have very few if any carbs so add whatever delicious ingredients you want.

This is my son’s favorite sandwich and I make it for his lunch most days. So I’m always tempted to take a bite of one but now I have my own! For this collard wrap sandwich I use turkey slices, Swiss cheese and bacon. Also I add a bit of mayo as well. Try any making your favorite sandwiches and use these collard wraps for lunch.
Well I hope you give these keto collard wraps a try. They were an eye opener for me. In the summer we really like to eat sandwiches so now I know how to make my mine low carb. Keto Collard Wraps Recipe
If you are looking for a keto, low carb sub sandwich substitute, try using collard wraps. They are sturdy and make an absolute delicious sandwich. Try this healthy lunch idea using my suggestions below or your favorite sandwich ingredients.
Ingredients
Low Carb Sub Sandwich
- 1 large collard greens leaf
- 2 slices hard salami
- 3 slices pepperoni
- 2 slices ham
- 2 slices provolone cheese
- 2 tablespoons red onions, thinly sliced
- 1 slice tomato
- 1 tablespoon Italian dressing
Low Carb Turkey Club Sandwich
- 1 large collard greens leaf
- 2 slices turkey breast
- 3 pieces bacon, cooked
- 1 slice Swiss cheese
- 1 teaspoon mayonnaise
Instructions
- Take one of the collard greens leaves and slice the thick part of the stem horizontally to make the leaf more flat. Also cut a V at the bottom to take out more of the stem.
- Rinse the leaf and place in a large skillet without drying. The bit of water will help steam the leaf. Cover with a lid and cook for 1 - 2 minutes to make the leaf more pliable. Dry the leaf if damp after cooking. It should be green and pliable but not totally cooked.
- Spread any mayonnaise if using. Then add your ingredients in the middle of the leaf towards the bottom right above the V you cut oup.
- Fold up the leaf at the bottom to cover the filling. Fold in the sides and roll up as neat and tightly as you can, tucking in the fillings as you go. It's much like folding a burrito or cabbage roll.
- NOTE: If you are making the sub sandwich add the dressing at the end on toppings before you roll. If using mayo, spread it on the leaf first before add ingredients. Most veggies, meats and cheeses are low carb so use whatever you want.
- Store leftovers in an airtight container.
