Recently my husband and I had sushi and we always forget how much we like it. So I was jonesin’ for it again and thought I’d try to make a low carb version.
I thought I could use some smoked salmon and make this keto California roll bowl. I’m not one to play around with raw fish so smoked salmon seem the way to go. And California rolls are much more approachable to me.
It was delicious! While most sushi is fairly low carb, sticky cooked rice is the one ingredient which is high in carbs. So I used cauliflower rice instead. Then I just topped it with colorful and healthy toppings that for a keto sushi experience.
This recipe is very low calorie (103 calories) and low carb (4.9g net carbs). It’s also high in protein (8.2g) so all in all this is a very healthy dinner idea that is super is super easy to make.
What is in a California roll?
There are a few different kinds of sushi. Sashimi is a type of sushi which is just raw fish. However other types use sticky sushi rice and various ingredients rolled up in a sheet of seaweed and sliced into pieces. This post explains more about the different types.
A California roll is a type of sushi roll that has the sticky rice in on the outside and a piece of seaweed in the middle that wraps up the other ingredients. It usually contains cucumber, crab or imitation crab and avocado. Sometimes it is rolled in sesame seeds or fish roe.
Recipe ingredients I used.
Above you can see the fresh ingredients I used for this bowl which are smoked salmon, thin sliced English cucumber, red onion, radishes, fresh avocado slices and cauliflower rice. I also used nori seaweed and made a dressing for on top.
I use raw cauliflower rice because I wanted the bowl to be crunchy but you can simply microwave it for a few minutes before hand and let it cool a bit if you want it to be more like rice.
The other ingredients are what I had on hand but you could also use real crab meat, imitation crab meat, cooked shrimp, fresh herbs, carrots, peppers, sesame seeds, mayonnaise, etc.

Below are some of the Asian ingredients I bought at a regular grocery store. They were seaweed sheets, wasabi paste, white sesame seeds, sesame seed oil, soy sauce, ginger and seasoned rice vinegar.

How to make this keto California roll bowl.
- Make your cauliflower rice by placing florets into a food processor and pulsing until it looks like grains of rice. Place into a medium bowl. If you want it cooked, add to a microwave bowl and cook for a few minutes. Let cool a bit before placing the toppings.
- Slice the onion, radishes, avocado and cucumbers as thinly as possible. Also cut the seaweed into very small pieces.
- Place the salmon, cucumber, radishes, avocado and red onion anyway you want on top of the cauliflower rice. Sprinkle the nori strips over top. You can either eat the bowl as is or mix it up.
- Whisk together the soy sauce based dressing and drizzle over the sushi bowl. If you want to add more sesame seeds on top you can. (Please scroll down to view and print the recipe card.)
Asian dipping sauce for low carb sushi bowl.
To make the dipping sauce for this California roll bowl, just whisk together soy sauce, rice vinegar, olive oil, sesame oil, grated fresh ginger, fresh garlic, Swerve brown sugar sweetener, wasabi and sesame seeds.
The amount of wasabi paste you use is up to you. And if you don’t like it you don’t have to use it at all.
As a matter of fact if you want to take a short cut you could also use a good Asian ginger dressing that you buy in a super market. You want to check the nutritional label for the carbs though.
You could also just use a bit of soy sauce and wasabi like you would with regular sushi. The dressing has much more flavor though.

Ingredients
- 2 cups cauliflower rice
- 2 oz smoked salmonÂ
- ¼ Nori sheet seaweed, cut into tiny pieces
- ¼ cup cucumber, thinly sliced

- ¼ cup radishes, thinly sliced
- ¼ cup red onion, thinly sliced
Dressing or Sauce
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 3 tablespoons olive oil
- 1 teaspoon sesame oil
- ¼ teaspoon Swerve brown sugar sweetener
- ½ teaspoon fresh ginger, grated
- 1 clove garlic, crushed
- 1 teaspoon sesame seeds
- wasabi paste to taste

Notes
Recipe Notes and Substitutions
- You can use whatever you want in your Califlornia roll bowl. If you don't like smoked salmon you could use cooked shrimp or crab.
- If you don't like seaweed, just eliminate it. However it does add to the taste. You could also try to find a seaweed snack and sprinkle it over the bowl.
- If you don't care about carbs, use regular cooked white rice as the base of the bowl.
- The dressing or sauce is very tasty but you could aslo try just soy sauce and wasabi like you would regular sushi. Or you can buy a bottle of Asian ginger dressing. Just make sure to check the carbs on the bottle to make sure it's low carb.
