This easy kielbasa vegetable soup will keep you warm on a cold day. Simple ingredients but full of flavor.
Have you ever heard of ham and cabbage soup? It’s something that I learned to make from husband’s family and something that we make every time we have a ham. It’s a simple but very tasty soup that you make from the leftover ham bone. Well I was in a panic as to what to make for dinner the other day and while I didn’t have a ham bone, I have kielbasa. And guess what? It was yummy! It was so easy to make and very warming on a cold day.
When I say it’s easy, I mean it was really easy. I simply added all the vegetables, water and broth to a pot and simmered until the vegetables were tender … about 20 minutes. Then I added the kielbasa and cooked for 10 minutes more. Easy peasy.
Easy Kielbasa Vegetable Soup
Well this was a short post because I was not planning on making this nor posting it. But I liked it so much I thought I’d share it with you. I hope you like it too! Here is the nutrition for 1 serving:

- 2 carrots, chopped
- 1 large piece of celery, chopped
- 4 cups cabbage, chopped
- 1 cup green beans, chopped
- 4 cups water
- 4 cups vegetable broth
- ½ teaspoon salt
- 1 teaspoon onion powder
- ½ teaspoon pepper
- 14 oz kielbasa, chopped
- Add all the vegetables, water and broth to a large pot and bring to a boil.
- Simmer for 20 minutes or vegetables are tender.
- Add in the kielbasa and cook for 10 minutes.
- Serve and enjoy!
