The other day I was making some sticky chicken legs and needed a quick and easy side dish. So I made this super simple keto fried recipe as fried rice is one of our favorite Asian foods.
Cauliflower rice is an excellent keto substitution for actual rice in this recipe as it has a similar texture and absorbs all the Asian flavors.
I had some cauliflower so I quickly made some cauliflower rice and stir fried it with garlic, ginger and other Asian seasonings. I even add some fried egg and the end result was a super easy and flavorful healthy side dish.
This keto fried cauliflower rice is both low carb and low calorie and even has quite a bit of protein for a side dish. It’s sure to be one of our favorite recipes and the kind of recipe to have in your back pocket for busy weeknight dinners.
Recipe ingredients I used.
All you need to make this keto friendly side dish is cauliflower, fresh ginger, garlic, green onions, soy sauce, sesame oil, olive oil or butter, egg and Swerve sweetener. . You could use any of the sugar substitutes if you want though or if you don’t care about carbs you can use regular sugar.
It’s important to use fresh ginger and garlic as they add a bulk of the flavor. You can also use fresh grated ginger that you find in a tube as well. I just would not use dried powdered ginger.
Note I did not use additional salt or black pepper because often the soy sauce adds a lot of salt. But if you want to add a pinch of salt feel free. And if you can take soy products, try coconut aminos but eliminate the sweetener if you do. It has a sweeter flavor than soy sauce.
How to make keto fried rice with cauliflower.
Step 1: First make your fresh cauliflower rice by chopping the cauliflower into florets and adding them to a food processor. Pulse until it looks like grains of rice. To me this tastes much better than frozen cauliflower rice but you can use that if you want. It might have excess moisture compared to fresh so make sure to drain it.
Step 2: Get out a large nonstick skillet and heat to medium heat. Add a tablespoon of olive oil or butter, grated ginger, crushed garlic and the white parts of the chopped green onions which are sometimes referred to as spring onions or scallions. Saute for just 1 minute so that it’s fragrant.
Step 3: Add in the riced cauliflower and mix well to combine. Cover and cook for 2-3 minutes so the rice starts to soften.
Step 4: In the meantime get out a separate skillet and spray with non stick cooking spray. Pour a beaten egg into the pan and cook until done. This should take 1-2 minutes to do. Chop it up and set aside.
Step 5: Mix the soy sauce, sesame oil and Swerve sweetener together in a little bowl. Pour over the cauliflower rice mixture and mix well. Cook for a minute and then add the cooked egg and mix once more.
Step 6: Take off the heat and garnish with the rest of the green onion and serve. Store leftover rice in an air tight container. (Please scroll down to view the printable recipe card.)
Ways you can change up this dish.
- This is like regular fried rice you would get at a Chinese restaurant. It’s a base dish that you can add other foods like pork, shrimp, chicken, tofu etc.to make it more of a complete meal.
- To do this I would dice the proteins into small pieces and saute them with the garlic and ginger. This should only take a few minutes if the pieces are small enough. Then continue with the rest of the recipe.
- You could use ground chicken, ground pork or ground turkey. And if you want to add extra vegetables try green peppers, broccoli florets or even some frozen veggies. However make sure to take into account the carb counts of the extra veggies.
- For garnishes try some fresh cilantro or fresh parsley. Sesame seeds, pine nuts, sliced almonds, water chestnuts, etc can add some extra crunch.
- Lastly you can add some eat with hot pepper flakes, sriracha sauce, chili oil or hot sauce.
