I’ve been trying to feed my son better. It’s so easy and convenient to feed him packaged foods…especially when he rarely likes the healthier versions that I make. It can be so discouraging. I remember once I spent hours making a gluten free pizza from scratch and he ate one bite and said he didn’t like it. I wanted to cry. So when I make healthy foods and he likes it I feel like doing a happy dance. I work hard for the happy dance. I saw these 4 ingredient cookies from Savory Lotus, the other day, and I knew I had to try them for Max.
First of all I had to make my own almond butter for these cookies as they are the main ingredient. I refuse to buy it in the store because it’s so easy to make and I always have raw almonds on hand. Just roast some in a pan and then turn them into nut butter via my Vitamix. Gotta love the Vitamix. So once I had the almond butter I just added some coconut sugar, a dash of salt and a beaten egg. How easy is that? I also added some S’Mores SF Torani syrup because he loves that flavor and I wanted to make sure he’d like them. I don’t think it’s necessary but it was tasty. The cookies were moist and tasty without being too sweet. If you like a sweet cookie you could use maple syrup or honey as your sweetener…or just more coconut sugar. Because I use the syrup too, they came out chewy but if you use just the coconut sugar they may be more of a crunchy flavor. Lastly, you don’t have make your own almond butter. Jarred almond butter will be just fine.
Recipe: Almond Butter Cookies (GF, 4 Ingredients)
- 1 cup almond or other nut butter
- 1/2 cup coconut sugar can use 1/4 cup maple syrup or honey
- 1 beaten egg
- 1 pinch of sea salt
- 3 Tablespoons SF Torani syrup optional
Preheat oven to 350F.
Mix nut butter with sugar and salt.
Add the beaten egg and mix well.
Spoon mixture onto a cookie sheet lined with parchment paper.
Spread the mixture to flatten the cookies. A fork dipped in water works well here. The cookies will not flatten and spread on their own.
Bake for 10 minutes. Let cool then eat!
