I’ve been trying to feed my son better. It’s so easy and convenient to feed him packaged foods…especially when he rarely likes the healthier versions that I make. It can be so discouraging. I remember once I spent hours making a gluten free pizza from scratch and he ate one bite and said he didn’t like it. I wanted to cry. So when I make healthy foods and he likes it I feel like doing a happy dance. I work hard for the happy dance. I saw these 4 ingredient cookies from Savory Lotus, the other day, and I knew I had to try them for Max. So here is my version of easy almond butter cookies!
Make your own almond butter?
First of all I had to make my own almond butter for these cookies as they are the main ingredient. I refuse to buy it in the store because it’s so easy to make and I always have raw almonds on hand. Just roast some in a pan and then turn them into nut butter via my Vitamix. Gotta love the Vitamix. So once I had the almond butter I just added some Swerve sweetener, a dash of salt and a beaten egg. How easy is that?
I also added some S’Mores Sugar Free Torani syrup because he loves that flavor and I wanted to make sure he’d like them. I don’t think it’s necessary but it was tasty. The cookies were moist and tasty and sweet. If you don’t care about carbs, you could use maple syrup or honey as your sweetener or even coconut sugar. Lastly, you don’t have make your own almond butter. Jarred almond butter will be just fine.
Easy Almond butter cookies
This recipe made 18 cookies. I made some with the syrup and some without and both were good. So if you don’t have the syrup, don’t sweat it. You simply mix all the ingredients together and then place on the cookie sheet. You want to flattened them with your hand or a fork because otherwise they won’t flatten on their own. Bake for 10-12 minutes and that is it! The nutrition for 1 cookie is:

Easy Almond Butter Cookies (GF, 4 Ingredients)
These easy almond butter cookies only take 4 ingredients and are gluten free too! An easy, healthy cookie your whole family will love.
- 1 cup almond or other nut butter
- 1/2 cup Swerve sweetener
- 1 beaten egg
- 3 Tablespoons Sugar Free Torani syrup (I like S'mores) optional
Preheat oven to 350F.
Mix nut butter with Swerve sweetener. Add Torani syrup if using.
Add the beaten egg and mix well.
Spoon mixture onto a cookie sheet lined with parchment paper.
Spread the mixture to flatten the cookies. A fork dipped in water works well here. The cookies will not flatten and spread on their own.
Bake for 10-12 minutes. Let cool then eat!
