As you know I love all things cauliflower. It’s a staple in my kitchen because there are so many things you can do with it. Every once in awhile I would see one of those beautiful pictures of a roasted head of cauliflower and today I decided to give it a try. I thought it would be tasty with a bunch of Mexican spices rubbed into it and maybe even topped with queso cheese sauce. My husband and I ate the whole thing! So give this Mexican whole roasted cauliflower a try, I think you are going to love it!
Lately I’ve been posting a lot of cauliflower rice recipes. In case you missed them I’ve recently posted mushroom brie cauliflower risotto, tomato & herb cauliflower rice and even a Middle Eastern cauliflower rice pilaf. I sincerely loved each and every one of them and they take no time to make (roughly 15 minutes) and are low carb.
Roasted Cauliflower Recipe
I learned about roasted cauliflower from Nom Nom Paleo. First I made a paste of olive oil, garlic powder, chili powder, onion powder, salt, pepper and cumin. I rubbed that into the cauliflower head and then placed it in a cast iron skillet. Cover it with aluminum foil and bake for 30 minutes. Take off the foil and bake for 1 hour more until it’s fork tender.
The result is a browned head with a creamy cauliflower middle. It truly melts in your mouth! I made a queso cheese of cream, Monterey jack and sharp cheddar cheese and served that on the side. I didn’t include that recipe because to be honest it hardens quickly and I didn’t think it was necessary to the recipe so if you have a good queso cheese sauce you can try that too … and send me the recipe if it’s low carb. 😉
Mexican Whole Roasted Cauliflower In A Nutshell
- make a paste of olive oil and spice and rub all over cauliflower head
- place cauliflower in a cast iron skillet and cover with foil
- bake for 30 minutes then take off foil and bake for 1 hour more
- let cool and serve

Try this Mexican whole roasted cauliflower and you will want to eat it all the time. The cauliflower just melts in your mouth and the spices give it an extra kick and only 4.4g net carbs per serving.
Ingredients
- 1 head cauliflower
- ¼ cup olive oil
- 1 teaspoon salt
- ½ teaspoon garlic powder
- ½ teaspoon cumin
- ¼ teaspoon onion powder
- ½ teaspoon chili powder
Instructions

Preheat oven to 375 degrees F.

Cut out core of cauliflower and take off the leaves. Place in a cast iron or oven proof skillet.

Mix spices into the oil and brush all over cauliflower head.

Cover the cauliflower with aluminum foil and bake for 30 minutes.

Take off foil and cook for 1 hour more until cauliflower is fork tender and brown all over.
