When I was younger my mother often made a linguine salad when we had picnics. She would use a spice mix called Salad Supreme, chopped vegetables and a bottle of salad dressing. Very easy and really tasty too! So we have been cleaning up our diet recently which meant no pasta and well roughly no packaged foods. So mom’s recipe was out and I came up with this low carb linguine salad. I was so happy because it came out really good. My hubby thought it was the perfect dish for spaghetti squash and it was almost as easy as my mom’s version.

New Found Love For Spaghetti Squash

I’ve had spaghetti squash before but I never really cared for it. However a few weeks ago I made a basil coconut shrimp dish with spaghetti squash and was hooked. Spaghetti squash has roughly a ¼ of the calories and carbs of pasta with the added benefit of fiber, antioxidants, vitamins and minerals. A friend of mine recently tried my meatball spaghetti squash casserole and shared it with all of her friends on Facebook! So check out that recipe too if you like spaghetti squash.

Low Carb Linguine Salad Recipe

I like to make my spaghetti squash with the Instant Pot these days. You just split them in half lengthwise, clean out the seeds and then cook them on a manual setting for 4 minutes along with a cup of water. I like to do two at a time so I have it on hand for other recipes.

For the recipe, I just chopped some veggies, scraped the spaghetti squash and mixed it with the dressing and seasonings. The nice thing about this recipe is that it doesn’t get mushy after a day or so. The spaghetti squash holds up well to the dressing.

Other Low Carb Variations To Try

Usually my husband likes linguine salad with pepperoni and various cheeses. This too would be tasty and probably lower carb than this version. You could also add typical antipasto ingredients like olives and artichokes. Just make sure they are all lower carb additions.

Well I hope you like this as much as me and my hubby did. I will definitely be making this all summer long. The nutritional information for 1 serving is:

169 cals / 15.7g fat / 6.8g carbs / 1.8g fiber / 1.7g protein = 5.0g net carbs

Ingredients

  • ¼ cup apple cider vinegar
  • ½ cup olive oil
  • 2 tablespoons Parmesan cheese, grated
  • 1 teaspoon paprika
  • 2 cloves garlic
  • ¼ teaspoon pepper
  • ½ teaspoon salt
  • ½ teaspoon celery salt
  • 2 teaspoons sesame seeds
  • ¼ teaspoon garlic powder
  • ½ teaspoon Italian seasonings
  • 3 cups spaghetti squash, cooked
  • 2 cups chopped vegetables (I used red onion, bell peppers, celery and zucchini)

Instructions

  1. Add cooked spaghetti squash and vegetables to a large bowl.

  2. In a small bowl mix everything else to make the dressing. Pour over the vegetables and mix well.

  3. Refrigerate for a few hours over over night so the flavors meld together.
