I bought a case of Palmini noodles and have never gotten around to using them. Then I saw these beautiful red peppers in the store and remembered a dish my mom used to make and thought it would go great with Palmini noodles.
So I made this low carb red pepper pasta with chicken just like my mom used to make but I used Palmini noodles to make it gluten free and low carb. Each serving of this creamy and delicious pasta dish has only 6.5g net carbs.
Ingredients And Palmini Pasta
I’m always looking for low carb pasta substitutes and when I heard about Palmini pasta I had to try it. Palmini noodles are made from hearts of palm so it’s an all natural vegetable pasta which has the texture of regular noodles and a mild taste. I’m still playing around with them but they worked really well with this recipe.
The ingredients in the low carb red pepper sauce are just red peppers, garlic, Better than Bouillon, heavy cream and parmesan cheese. In addition to the sauce I also have added cooked chicken and snow peas for a one pot keto dinner!
Let’s Make This Low Carb Red Pepper Pasta!
I already had some cooked chicken on hand but if you don’t, you can use rotisserie chicken or pan fry. You can also eliminate it and this recipe would still work out great.
So to make the sauce, you want to simmer chopped red peppers and garlic in broth made with Better than Bouillon.
Once the peppers are soft, add them to a blender with the heavy cream and blend until pureed.
Pour the sauce back into the pan and mix in the parmesan cheese. Next you add in the Palmini linguine noodles and snow peas and simmer for a few minutes. Then add in the chopped chicken and you are done.

- If you don’t have cooked chicken on hand, you can use rotisserie or just pan fry a few chicken breasts for this recipe.
- You can also eliminate the chicken altogether for a vegetarian dinner.
- To use the Palmini pasta you have to first rinse them well and then drain them well. I like to cook them for a few minutes too so they can take on the flavor of the sauce better.

- Texture is similar to al dente pasta.
- Very little or no taste if you rinse them well and cook for a few minutes according to the directions on the can.
- I actually like that they come in a can.
Cons
- Good as they are, they are not pasta.
- They are rather expensive.
- If you don’t rinse them well they have a briny taste.
I originally heard about these noodles from a friend of mine. She said she bought hers on Walmart but I just bought mine on Amazon. If you buy some, try Julianne’s creamy cajun shrimp dish that uses Palmini noodles. She might have even more dishes too and they are all keto. Other Low Carb Sauces To Try
They veggie noodles would be good with any sauce that has a lot of flavor. For instance this shrimp pesto recipe or this keto alfredo recipe would work great. Also a real meaty marinara sauce would be a good fit for Palmini pasta.
If you ever come across this Palmini pasta you should give it a try. Again, it’s not pasta but rather hearts of palm noodles but they are pretty darn good! The nutritional information for 1 serving is:

Low Carb Creamy Red Pepper Pasta with Chicken
If you are looking for a gluten free pasta, try this low carb creamy red pepper pasta recipe. It uses Palmini noodles make from hearts of palms and mixed with a creamy red peppers sauce with chicken and snow peas. This delicious and low carb dinner has only 6.5g net carbs.
Ingredients
- 2 tablespoons olive oil
- 3 cloves of garlic
- 1 teaspoon Better than Bouillon chicken base
- 2 cups red peppers, chopped
- 1 cup water
- 2 tablespoons heavy cream
- ¼ cup parmesan cheese
- 1 can Palmini linguine pasta
- ½ teaspoon salt
- 10 snow peas
- 2 lbs chicken, cooked and chopped
Instructions
- In a large saute pan, add the olive oil, peppers, salt and garlic and saute for a minute or two.
- Mix the Better than Bouillon with water and pour over the pepper mixture.
- Cover and cook for 5 minutes or until the peppers are fork tender.
- Pour in a blender along with the cream and puree until smooth and then pour back into the pan.
- Add in the parmesan cheese and whisk until well combined.
- Then rinse well and drain Palmini noodles and add to pan along with the snow peas.
- Mix, cover and cook for 5 minutes.
- Then mix in the chopped cooked chicken and serve.
