Growing up in Pittsburgh we know all about Isaly’s chipped ham and their bbq sauce. Well today I was in the mood to use that chip chopped ham along with my own sugar free bbq sauce to make this low carb chipped ham bbq recipe.
And I also use keto cheese waffles as the bun! It’s a super easy dish to make and definitely something the whole family will love even if they are not on a low carb diet.
What is chipped chopped ham?
Growing up in Pittsburgh chipped ham barbecue was very popular. There was a local chain of dairy retail stores called Isaly’s that sold the chipped chopped ham and popularize this dish with their BBQ sauce too. (source) Learn more about Isaly’s and their products on their website.
Chipped ham is when they take regular ham lunchmeat and chip or shave the meat with a commercial meat slicer. The result is very thin pieces or chips of ham like those pictured below.
This gives the ham a different texture and is great for holding in the bbq sauce. Of course you can ask your deli to try to chip or shave ham in to very thin slices or just find the thinnest slices ham to make this dish.
How to make sugar free bbq sauce.
The ingredients I used to make this sugar free barbecue sauce is tomato paste, yellow mustard, water, apple cider vinegar, Swerve brown sugar sweetener, Worcestershire sauce, onion powder and garlic powder.
Note if you don’t care about carbs you can just use regular brown sugar.
To make the sauce, just pour everything into a skillet and cook over a medium heat. Whisk everything well to combine. Let it simmer for 5 minutes or so it thickens and for the flavors to meld together as well.
To make chipped ham bbq just add the chipped ham to the sauce and mix it well. Let it heat up and in about 5 more minutes you have a tasty yet low carb ham bbq dinner!
How to make the cheese waffle keto buns.
This is basically from my keto cheese waffle burger post. To make the waffle buns:
- In a mixing bowl, beat 4 eggs and mix with 1 cup cauliflower rice, 1 cup mozzarella cheese, 1 cup cheddar cheese and ½ cup of parmesan cheese.
- Heat up your waffle iron. I love my Dash mini waffle maker for making small cheese waffles. Use a little grease so they don’t stick.
- Place about ¼ cup of the mixture in the middle of the waffle iron and make all the waffles. You should get 6 to 8 small waffles.
Other low carb bun options are: keto buns on Amazon, lettuce wraps, egg wraps, low carb tortillas, or low carb bread (I like Aldi’s keto bread).
Recipe Tips and Notes
- If you can’t get chipped chopped ham at a deli or grocery store, buy the thinnest sliced ham you can. Aldi’s Fit and Active brand makes very thin sliced ham. Or you can ask your deli to chip or shave the ham as thin as possible if they don’t know what chipped ham is.
- My barbecue sauce is sugar free but if you don’t care about cutting back carbs, just use regular brown sugar for the recipe.
- I used my cheese waffles as buns to cut back on the carbs and it was really good! But to save even more carbs, you can eat these open faced with just one waffle. You also can try other low carb buns, wraps, lettuce or eat it as is without a bun.
- If you don’t care about carbs you can use regular soft hamburger buns or rolls.

Low Carb Chipped Ham BBQ
The low carb chipped ham bbq is adapted from a dish I grew up with. The sauce is a spicy and sweet sugar free bbq sauce with chipped chopped ham. You can eat it on cheese waffles as the bun or as is.
Ingredients
- 1 lb ham lunchmeat, chipped
- 6 tablespoons tomato paste
- 1 teaspoon yellow mustard
- ¾ cup water
- 3 tablespoons apple cider vinegar
- 3 tablespoons Swerve brown sugar sweetener
- 1 tablespoons Worcestershire sauce
- 1 teaspoon onion powder
- ½ teaspoon garlic powder
Instructions
- In a large skillet add everything except the ham. Whisk together and let simmer for 5-8 minutes to get the flavors to meld together.
- Add in the chipped ham and mix well.
- Let cook for another 5 minutes to. heat the ham through and let the ham soak up the sauce.
- Eat over low carb buns, cheese waffles, low carb wraps or as is. See notes for cheese waffle recipe.
