Every spring I crave asparagus. It’s in season now and it reminds me of all the green blossoming all around me. And it makes me excited for my garden veggies soon to come. A couple years ago I made asparagus noodles and thought how good they would be with a creamy lemon dijon sauce! It only takes a few minutes to make and is a healthy, bright, low carb dinner that you will crave! It’s only 4.4g net carbs too.
Choosing The Right Size Asparagus For Noodles
Right now I see a lot of thin asparagus at Aldi. I prefer thinner asparagus for just a side dish or to use in a dip like this. However for this asparagus recipe you need those big, thick asparagus. I found mine at Costco and immediately thought to make noodles out of them.
How To Make Asparagus Noodles
These are really easy and you don’t need any special tools, just a vegetable peeler. Start by cutting the tops off the spears and save them to eat with this dish or later. Then take your peeler and make thin but wide ribbons from the spears. This is a little bit of a delicate process so take your time.
Hold the asparagus by the woody end and start peeling from there. What you should have left of the spear is just the woody end and little of the asparagus spear when you are done.
Below you can see what it looks like when you are done. This are raw noodles and you wouldn’t want to eat them like this though you could if you wanted to. You want to microwave them for just a few minutes. I like mine al dente but if you want them softer, check them at 2 minutes and put them in longer if you don’t like the texture.
Creamy Low Carb Lemon Dijon Sauce
This is a tasty asparagus sauce recipe. Actually it’s essentially the lemon dijon sauce from my peppered tuna steaks but I added a bit of parmesan at the end. It thickened the sauce and made it even more delicious in my opinion.
You start by melting butter in a small pan and add in crushed garlic, cream, dijon mustard, lemon juice and zest. Whisk and let simmer for about 5 minutes and then add in the parmesan cheese. Stir until melted and incorporated in the sauce. Turn off the heat and it will thicken a bit more.
When the noodles are done, pour over some sauce and add a bit more parmesan cheese if you wish. This is such a simple but delicious spring dish that you can eat as is or as a side dish. You could add chicken, fish or shrimp too!

Low Carb Asparagus Noodles with Creamy Dijon Lemon Sauce

Ingredients
- 1 lb asparagus, made into noodles*
- 1 tablespoon butter
- ½ cup heavy cream
- 2 tablespoons lemon juice and zest of ½ lemon
- 1 tablespoon dijon mustard
- 2 cloves garlic, crushed
- 2 tablespoons Parmesan cheese (more if sprinkling on top)

Start by making the aspraagus noodles. First cut of the tops and save to eat later or add to this dish if you want. Hold the aparagus by the woody end and using a vegetable peeler, make ribbon noodles. All you should have left is the woody stem and part of the spear.

To make the sauce, add the cream, mustard, lemon juice, zest and garlic to a small sauce pan. Whisk and bring it to a simmer. Cook for 5 minutes and add the parmesan cheese. Whisk again until the cheese is melted and well incorporated.

In the meant time microwave the apsaragus noodles for about 2 minutes. I like mine al dente but if you want them softer, cook for another minuter ot so.

Pour over the sauce and add more Parmesan cheese on top if you wish. Note you might have extra sauce and this is great on chicken or fish too!
