Recently I had the opportunity to enter a Cabot Cheese recipe contest and I jumped at it. I LOVE cabot cheddar cheese and usually buy huge bricks of it from Costco. However for this recipe contest I was shipped free sharp cheddar cheeses and I have so many recipe ideas to use it.
Today I am sharing with you my keto cheesy bacon cauliflower rice stuffed peppers. These turned out so good that my husband has already asked me to make them again. The cheesy cauliflower rice tastes great on it’s own. And the whole budget friendly meal only needs 5 ingredients. Each stuffed pepper has 2.7g net carbs and 104 calories so this family recipe is a keeper for us!

See those tasty ingredients below? That’s all you need to make these keto stuffed peppers. I used colorful bell peppers, bacon, cauliflower rice, green onions and some Cabot Seriously Sharp Cheddar Cheese.
Making The Cheesy Bacon Cauliflower Rice
The cheesy bacon cauliflower rice is really easy to make and as I’ve already said it tastes great on it’s own. So take a bite before you stuff the peppers and see for yourself.
First thing you want to do is fry the bacon in a large skillet. When it’s done take it out but save the grease in the pan. Add the green onions and cauliflower rice and saute in the bacon grease for a couple minutes. Then add the bacon back in along with half of the Cabot cheddar cheese and mix well.
Finishing The Keto Stuffed Peppers
I like to precook the peppers in the microwave first to make sure they are nice and soft. So I use this microwave steamer and cooked the peppers for 4 minutes. I do this while the bacon is cooking.
Both the microwave cooked peppers and cauliflower rice should be done at the same time. Place the pepper halves in a baking dish and fill them with the stuffing. Top with more cheddar cheese and bake for 20 minutes.

Low Carb Bacon Cheesy Cauliflower Rice Stuffed Peppers
These keto cheesy bacon cauliflower rice stuffed peppers are an easy and dinner your family will love. The bacon and cheddar cheese cauliflower rice tastes delicious on it's own. Each pepper has only 2.7g net carbs and 104 calories!
Ingredients
- 4 bell peppers, cut in half and cleaned
- 2 green onions, finely chopped
- 4 strips of bacon
- 3 cups of cauliflower rice
- 4 oz Cabot Seriously Sharp Cheddar Cheese, grated
Instructions
- Preheat oven to 400°F.
- Cut peppers in half and clean out the sides and ribs. Microwave for 4 minutes and let cool.
- Meanwhile cook the bacon slices in a skillet. When done take them out but use the bacon grease and skillet to make the cheesy cauliflower rice.
- First add the cauliflower rice and green onions to the skillet. Cook for a few minutes then add in the cooked bacon (crumbled) and half of the cheese. Stir to melt the cheese then take it off the stove.
- Place the cooked pepper halves in a baking dish and then stuff with the cauliflower mixture. Top with the other half of the cheddar cheese and bake for 20 minutes.
- Let cool before eating.
