The other day I had a few leftover Italian sausage links and some fresh spinach that I wanted to use up. These two ingredients would be great over pasta but today I went with this keto cauliflower crust.
I topped it with the sausage and spinach as well as a few mushrooms and peppers. Deliciousness! This gluten free cauliflower pizza is very easy to make and you can use whatever toppings you want!
What Does A Cauliflower Pizza Taste Like?Â
I’ve made cauliflower pizza quite a few times. First let me say that you cannot taste the cauliflower in the crust. Also in my opinion it’s not the same as regular pizza but it is very, very tasty. If you are looking for a more bread-like texture I would suggest using a keto fathead dough.
However I think you should try the cauliflower crust because it is very flavorful and it’s a healthy way to eat more veggies.
What Is Cauliflower Pizza Crust Made Of?
A cauliflower pizza crust is made of cauliflower rice, mozzarella cheese, eggs and spices.
I like to use a food processor and make my own cauliflower rice because it’s easy and works well. However you can use store bought cauliflower rice too. Just make sure wring out all of the excess water. Especially if it is frozen.
Here’s How I Made My Keto Sausage Pizza
- Mix cauliflower rice with eggs, garlic and mozzarella cheese. Spread evenly over a parchment paper covered baking sheet.
- Bake in a 425°F oven for 15 minutes until cooked and browned a bit. Meanwhile brown the sausage, peppers and mushrooms in a saute pan.
- Once the cauliflower pizza crust is baked, take out and top with fresh chopped spinach.
- Then layer the cooked sausage mixture.
- Top with more shredded mozzarella cheese.
- Bake for 5 minutes more to melt the cheese. Let cool then eat.
Recipe Tips And Notes
- I prefer to make my own cauliflower rice by adding cauliflower florets to the food processor and pulsing until it looks like grains of rice. Store bought can work as well just make sure to wring out any excess liquid, especially if it is frozen.
- I do not use cooked cauliflower rice to make the crust, I prefer it raw. Also I prefer fresh spinach as frozen spinach is too wet and will make the crust soggy.
- You can add more spices to the cauliflower pizza crust if you wish. Try Italian seasonings, garlic powder or onion powder. However I felt the Italian sausage had enough flavor.
- Don’t brown the crust too much as you will be putting it back in the oven with the toppings and you don’t want it to be too dry.
- You can use any type of low carb toppings you want on this pizza.

Ingredients
- 2 cups cauliflower rice, raw
- 2 cup of mozzarella cheese, shredded
- 2 eggs, beaten
- 1 Italian sausage link, casing taken off
- 2 medium mushrooms very thinly sliced
- ½ cup bell peppers, thinly sliced
- 2 cloves of garlic
- 1 cups of fresh spinach
Instructions
- Preheat oven to 425°F.
- Mix raw cauliflower rice with eggs, 1 clove of garlic (crushed) and 1 ½ cups mozzarella cheese. Spread evenly over a parchment paper covered baking sheet.
- Bake for 15 minutes until cooked and browned a bit.
- Meanwhile brown the sausage, peppers, 1 clove of garlic (crushed) and mushrooms in a saute pan with a little cooking spray.
- Once the cauliflower pizza crust is baked, take out and top with fresh chopped spinach. Then add the cooked sausage mixture.
- Lastly, top with the rest of the shredded mozzarella cheese.
- Bake for 5 minutes more to melt the cheese. Let cool then eat.

I have never had a cauliflower pizza crust but you make it sound so simple. Also, I love (LOVE) salsiccia, so I think that the topping is really tempting me here.
