While on vacation last week we had pulled chicken which was so yummy. When I got home a was craving it and decided it would make a great stuffed pepper.
So today I’ve made some keto bbq shredded chicken stuffed peppers. I made a big batch of shredded chicken along with my low carb bbq sauce, added a few peppers, cheddar cheese and it was done!
Ingredients In Shredded Chicken Stuffed Peppers
The only ingredients for this recipe are peppers, shredded chicken, low carb bbq sauce and cheddar cheese.
The other day I made a big batch of shredded chicken in the slow cooker and ended up freezing much of it in portions for casseroles, soups and recipes like this.
How To Make Shredded Chicken In The Slow Cooker
To make shredded chicken I just bought a large quantity of chicken breasts and added some Better than Bouillon and water so a slow cooker and cooked on high for 4 hours.
When they are done, they will just fall apart and you can shredded them at that point. I think took about 1 cup each and put them in ziplock bags and froze them for other recipes. One of which is this one.
Low Carb BBQ Sauce
I’ve made this low carb bbq sauce for lots of my recipes like my slow cooker bbq beef roast and bbq chicken as well as my air fryer ribs.
This keto sauce uses a lot of spices and common ingredients in your pantry. Just whisk them all together in a small pan and cooked it down for about 5 minutes. It gets nice and thick.
I would recommend tasting it once it’s thickened and if you want it sweeter, add more Swerve brown sugar or if you want it hotter, add more pepper flakes.
Let’s Make These BBQ Shredded Chicken Stuffed Peppers
Once you have the shredded chicken and bbq sauce, all you need to do is precook the peppers. So cut them in half, clean them out and microwave for 5 minutes.
While those are cooking, use half of the bbq sauce and mix it with the shredded chicken.
Once you can handle the cooked peppers, add them to a large baking dish and spoon in the shredded chicken. Then top each one with some more of the keto bbq sauce and cheddar cheese.
Bake them for about 30 minutes and that is it!
Recipe Tips And Notes
- You can use rotisserie chicken or any precooked chicken you have on hand. Just shredded it the best you can and mix with some of the bbq sauce.
- I made my own low carb bbq sauce but if you have a brand or recipe that you like go ahead and use that.
- Make sure to taste the sauce and add more Swerve sweetener or pepper flakes to your taste
- Make sure to precook the peppers for it will assure that you peppers will be tender enough when they are done.
- You can use other bbq type meats in this recipe as well. You can use brisket, pulled pork or shredded beef.

Keto BBQ Shredded Chicken Stuffed Peppers

Ingredients
- 3 cups cooked shredded chicken
- 3 sweet bell peppers, cleaned and halved
- ¾ cup shredded cheddar cheese
Low Carb BBQ Sauce
- 1 teaspoon onion powder
- 2 cloves of garlic, crushed
- 5 tablespoons of tomato paste
- 2 teaspoon chili powder
- 2 teaspoons paprika
- 1 tablespoon worchestershire sauce
- 1 teaspoon crushed chili peppers
- 2 tablespoons apple cider vinegar
- 3 tablespoons butter
- 1 teaspoon dry mustard spice
Instructions
- Preheat oven to 400°F.
- In a saucepan add all of the BBQ sauce ingredients and bring to a simmer. Cook for 5 minutes until it thickens and then set aside.
- In th meantime cut the peppers in half and clean out the seeds. Microwave for 5 minutes.
- Take half of the sauce and mix with the cooked pulled chicken.
- Place the peppers in the baking dish and fill each with the pulled chicken mixture.
- Top with 2 tablespoons of sauce and the cheddar cheese.
- Bake for 30 minutes. Let cool before eating.
