This Instant Pot vegetable sipping broth is healthy and tasty to sip through out the day when you are dieting or if you are feeling under the weather. Can also be made in a slow cooker and used for cooking or as a base for soups.
You are probably wondering what is sipping broth? When I am dieting or trying to watch what I’m eating I find myself drinking water, tea, coffee, shakes, etc but they are all on the sweet side. Instant Pot vegetable sipping broth is the perfect solution for those in between meal cravings, that is good for you and satisfying.
This is really just homemade vegetable stock that you make in an Instant Pot. The beauty is that you add any vegetables you have on hand and in less than an hour you have about 12 cups of tasty vegetable broth. By adding lots of herbs and spices you can give it great flavor and get all those nourishing vitamins and minerals from the veggies.
I think the next thing I’m going to do is make bone broth in my Instant Pot along with a bunch of vegetables and spices like this recipe. I think that will add another healthy component to this broth. Of course Kettle & Fire makes beef & chicken bone broth these days so I could just buy it. 😉 But back to our vegetable broth. Sipping broth is good for:
- when you crave something savory
- when you feel a cold coming on
- resting the digestive system
- using in soups and stews
- using up those random vegetables, herbs and spices you have laying around
I sometimes like to use spices like fennel, ginger and coriander. This gives it a more curry type flavor. Today I went with a more basic blend but feel free to experiment. I have even made a chicken soup with tea that was sensational! On a side note, you can see how the turmeric give it a great yellow hue. Turmeric is great for you as it contains curcumin which is reported to be good for immunity and brain health. Here is a good article about turmeric if you are interested.
Instant Pot Vegetable Sipping Broth
To make this vegetable broth just add a bunch of vegetables, herbs and spices to the Instant Pot and pressure cooked for 30 minutes. You probably don’t have to cook it that long but I wanted to extract as much flavor as possible. Of course you can always make this in a slow cooker too by cooking all day or even over night to maximize flavor. Remember even if you are interested in sipping this all day, it’s a delicious vegetable broth to use for cooking too. Enjoy!
Instant Pot Vegetable Sipping Broth
Ingredients
- 4 cups of vegetables I used celery, carrots, peppers, zucchini, whatever you have on hand
- 10 cups of water
- ½ onion chopped
- ½ teaspoon of turmeric
- 1 teaspoon of salt
- ½ teaspoon of cumin
- 1 teaspoon of pepper
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 1 teaspoon thyme
- 1 teaspoon oregano
- ½ teaspoon paprika
Instructions

Add all ingredients to your Instant Pot.

Place the lid on and lock into place. Turn the pressure release to the back to create pressure.

Hit the manual button for 30 minutes.

When broth is done, either let the pressure release naturally or instantly.

Strain and store in containers.

I like to store 2 cups per container in the freezer and take them out as I need them.
