These peanut butter cream cheese bites are the perfect little treat for those on a low carb diet or even if you aren’t. Each has only 1.1g net carbs.
I have a sweet tooth that seems to be growing and growing over the years. So when I want to lose weight it’s the first thing that I try to control. Chocolate chips cookies are my kryptonite. Total denial of sweets does not work for me, so I try to keep on hand a few low carb sweets such as: really dark chocolate, chocolate peanut butter candy, maple freezer candy, low carb cookies (coming soon) and these peanut butter cream cheese bites. They are super easy to make and nice to have on hand in the freezer so I can have one or two in the evening.
This is really a recipe redo. I made this recipe when I first started my blog but this is how I made them now. Each one is only 1.1 net carbs and they are pretty big so you wouldn’t want to eat more than one or two at the most.
All you do is whip your cream in a standing mixer until it’s light and fluffy. Then add the rest of the ingredients and mix until they are well combined. I use PB2 (affiliate link) in my recipe and if you aren’t familiar with it, it ‘s powdered peanut butter. In my opinion it doesn’t taste like peanut butter when you add water to reconstitute it but it is good in recipes. I think you can probably buy it in most grocery stores and if not I buy it on Amazon or Vitacost.com cheaply. Back to the recipe, use a silicone spatula and spoon the mixture into a silicone tray and freeze. The silicone makes it easy to pop out when then are frozen. Once frozen I then put them in a freezer bag and grab one when I want a treat.
Peanut Butter Cream Cheese Bites
This is another simple recipe but when you are trying to eat low carb, it’s hard to find something sweet that you can enjoy without going to great lengths to cook or bake. This peanut butter cream cheese bite recipe is perfect for those days when you just need a little something something after dinner or as a snack. I haven’t varied it much as I love peanut butter but I’m sure you can make a similar one with cocoa powder or vanilla protein powder. Hope you like it! Nutritional information per serving:

- berry coconut ice cream
- pumpkin protein ice cream
- chocolate peanut butter sweets
- maple walnut freezer fudge
- 1 cup heavy whipping cream
- 3 Tablespoons PB2 Powdered Peanut Butter
- 2 Tablespoons Swerve or Splenda
- 2 Tablespoons sour cream
- 4 Tablespoons cream cheese, softened
- Pour your cream into a standing mixer and whip until light and airy.
- Add the rest of the ingredients and mix well.
- Spoon into silicone ice cube tray or other silicone mold.
- Freeze over night.
