These raspberry earl grey tea cookies are a tasty way to get a lift in the afternoon. The raspberry and earl grey flavors make these low carb cookies the perfect match to a cup of tea. Gluten free, grain free and only 0.2g net carbs per cookie.
I might have mentioned before that my friend Debbie sells Steeped Tea. I really like them and I have all sorts of flavors. Recently I’ve been liking black teas so she told me about their raspberry earl grey black tea. It and the monk’s blend are my new favorites. Anyway, I’m having an online Steeped Tea party so I wanted to make a few recipes to show all the things you can make with loose leaf tea. I started with these raspberry early grey tea cookies. They are quick and easy as well as delicious. Each soft and chewy cookie just has 0.2g net carbs!
I’ve made this type of cookie before on the blog. Last time I made a low carb spice tea cookie that was really good. You can make a small batch of these cookie very easy and with only a few ingredients. The basic recipe uses raw walnuts. an egg, baking soda, sweetener and what ever flavoring you want. So you aren’t using any flour or grains so it’s low carb and gluten free too.
I love the flavor of raspberries. This raspberry earl grey tea already has a lot of raspberry flavor and I added more with raspberry extract and a Torani’s sugar free raspberry syrup. Not only will these cookies satisfy your sweet tooth, they might give you a little jolt from the caffeine as well!
To make these low carb cookies, all you have to do is put your raw walnuts in a food processor. You process until the walnuts look like cookie batter. Too much processing will make it more like a nut butter. You don’t want that. Then spoon the walnuts into a bowl along with the other ingredients and mix well. Using a spoon, place the cookies on a silicone mat or a piece of parchment paper. Bake for roughly 8 minutes and you are done!

Raspberry Earl Grey Tea Cookies (low carb)
- 1 cup raw walnuts
- 1/2 teaspoon baking soda
- 1 teaspoon raspberry extract
- 1 egg
- 2 tablespoons Steeped Raspberry Earl Grey Black Tea
- 1 tablespoon Pyure or 2 tablespoons Swerve or Splenda
- 1 tablespoon Torani Sugar Free Raspberry Syrup
Preheat oven to 375 degrees F.
If you have a spice grinder add the tea and grind into a fine powder. If not add to a food processor and process to a fine powder. Take out and set aside.
In a food processor add your nuts and process until it becomes a batter but not yet a smooth nut butter.
Spoon into a mixing bowl, add the rest of your ingredients and mix well.
Cover a cookie sheet with parchment paper or silicone mat.
Spoon out batter, about a tablespoon each. Cookies will spread during baking.
Bake for 8 minutes. Check to make sure they are nice and brown but not too crunchy.
Store in a sealed container. I freeze mine.
