I’m on a chia seed kick because I bought a big bag from Costco and it reignited my love chia drinks and puddings. Today I made this pumpkin spice coffee chia seed drink and it is delicious!
This drink only has 105 calories, it’s sugar free, low carb, caffeine free, filling and very tasty. What more can you ask for?
I used a coffee substitute because I wanted the taste of coffee but not the caffeine or the acidity of decaf. However you can easily use regular or decaf coffee if you want.
My favorite coffee substitute that tastes like coffee.
I love the taste and smell of a cup of coffee. However I can no longer handle the caffeine nor the acidity of decaf. So over the years I’ve been looking for coffee alternatives that taste like coffee. I think I’ve tried just about every coffee substitute out there. To me they rarely taste like coffee until I found Cafix.
Cafix is a healthful coffee alternative that is a blend of all natural, caffeine free ingredients which are roasted barley, chicory, barley malt, figs and sugar beets.
One teaspoon has 5 calories and 1g of carbs but to me that’s worth it because it is the closest thing I’ve come to that actually tastes like coffee.

My second favorite Celestial Seasonings Roastarama which is a tea that tastes like coffee. It has more of a spicy coffee flavor and doesn’t taste like black coffee but it’s close. Especially for a tea. It’s great for after dinner if you like a sweeter coffee drink.
Roastarama has robust flavors of roasted chicory and barley, a hint of chocolate from roasted carob and just a touch of cinnamon and allspice.
Recipe ingredients I used.
For this tasty coffee drink I used Cafix, water, heavy cream, cinnamon, pumpkin pie spice, chia seeds and SweetLeaf Vanilla Cream liquid stevia.
Note if you want to just use regular or decaf coffee just substitute the Cafix with your favorite coffee.
How to make pumpkin spice coffee chia seed drink.
- First you want to make your Cafix coffee substitute (or just use regular coffee). This recipe makes two servings by the way. So mix 2 teaspoons of Cafix with 2 cups of water (or use 2 cups of regular coffee) in a large glass or even large pyrex measuring cup. It should be room temperature.
- Mix 2 tablespoons of chia seeds with the coffee mixture and set in the refrigerator for about an hour or until the chia seeds swell and expand.
- Take out the chia seed drink and mix in the cinnamon, pumpkin pie spice, stevia and heavy whipping cream. Mix well and pour into 2 mugs or cups.

If you want you can top with whipped cream for a coffee house drink but it doesn’t need it.
Why drink chia seed drinks?
Chia seeds are very healthy and if you like the taste of texture of them, you might want to make them a part of your diet. They are full of fiber so they fill you up and help digestion.
They are low carb, high fiber, a good source of omega-3 fatty acids and protein and high in many minerals like selenium, magnesium, and calcium. (source)

Pumpkin Spice Coffee Chia Seed Drink
This pumpkin spice coffee chia seed drink is a deliciously healthy cold drink. It tastes like a pumpkin spice coffee with chia seeds so it's filling and sweet. But it's also low carb, sugar free and caffeine free. It uses a coffee substitute so it won't hurt your stomach like regular coffee might.
Ingredients
- Serves 2 - 2 t caffix, 2 cups water, 2 T cream, ½t cinnamon, ½t pumpkin pie, 1 dropper stevia, 2 T chia seeds
- 2 teaspoons Cafix coffee substitute **
- 2 cups water
- 2 tablespoons chia seeds
- ½ teaspoon cinnamon
- ½ teaspoon pumpkin pie spice
- 2 tablespoons heavy whipping cream
- 1 dropper of SweetLeaf Vanilla Creme liquid stevia**
Instructions
- **Note you can use 2 cups of regular or decaf coffee if you don't care about the Cafix coffee substitute. Also you can use your favorite sweetener if you dont have the liquid stevia. Use enough to make it as sweet as you like.
- First you want to make your Cafix coffee substitute (or just use regular coffee). Mix 2 teaspoons of Cafix with 2 cups of water (or use 2 cups of regular coffee) in a large glass or even large pyrex measuring cup. If using hot water or coffee let it come to room temperature.
- Mix 2 tablespoons of chia seeds with the coffee mixture and set in the refrigerator for about an hour or until the chia seeds swell and expand.
- Take out the chia seed drink and mix in the cinnamon, pumpkin pie spice, stevia and heavy whipping cream. Mix well and pour into 2 mugs or cups.
Store leftovers in the refrigerator. - Optionally you can top with whipped cream if you wat.
