I’ve been wanting to add cereal to a popsicle for a couple years now. I don’t know why but I always thought it would taste good. So today I finally made low carb coffee popsicles with cereal … for breakfast!
They taste like a really good cup of iced coffee but has added protein and some keto cereal. Everything in it is sugar free and low carb… even the cereal!
So you can eat these keto coffee popsicles for breakfast on a hot day or as a afternoon snack. Each one only has 100 calories, 6.3g protein and 2.8g net carbs!
About The Low Carb Cereal…..
I just learned about these low carb cereals last year and I always have a stash on hand because I really miss cereal on a low carb diet.
They are rather expensive but with just 3g net carbs, they are worth it to me and I eat them as a special treat. In this recipe I’ve used Magic Spoon Frosted cereal but the Highkey cereal (frosted) would be a good one too. It has no net carbs and 10g of protein! The shape is more like a Rice Krispie though.
Coffee Popsicle Ingredients
The items I used for these breakfast popsicles were black coffee, protein powder, vanilla sugar free pudding, heavy cream, Torani coffee sugar free syrup, almond milk and the Magic Spoon frosted cereal.
A note about the protein powders. I like Isopure Zero Carb vanilla as it has no carbs. It comes in a variety of flavors too. However you can use your own favorite protein powder as long as it’s low carb.
I think the Torani coffee syrup really adds to the flavor of these ice pops but Mocha Skinny syrup would also work or maybe even just making a stronger type of coffee and then using a sweetener like Swerve too.
Let’s Make Some Popsicles For Breakfast!
These are really easy. You want to add all of the ingredients except the cereal to a mixing bowl. Beat on high for a few minutes until the pudding makes it thicken and the cream whips a bit.
Next add as much cereal to the popsicle molds as you want and then pour the mixture into the molds. Add popsicle sticks and freeze for a few hours until they get hard.
My New Popsicle Molds
I have a lot of popsicle molds but I’m excited about these Kootek popsicle molds. Mostly because they have a cool way of getting them out. You see the container below. You just fill it with hot water and then you submerge the popsicle mold in it for a minute and they slide right out.
BEST OF ALL is that you can just hang one popsicle in the container or two or three to get your popsicles out.
Can you see how you would just slip in the end pop in the container to warm? And then slip two of the pops in the container? I hope that makes sense. It’s really helpful when you only want to get one or two pops out at a time.

- The calories and carbs for this recipe would depend on the size of the molds you used. As a reference for my Kootek popsicle molds, I got 8 popsicles out of this recipe.
- You don’t have to use the low carb cereals I used, you can use whatever you want or not use any at all. I have listed a few low carb cereal recipes below the recipe card.
- Other ideas to add to these popsicles would be nuts, coconut flakes, cocoa nibs, keto chocolate chips, etc.
- If you don’t want the caffeine, of course use decaf coffee.
- If you don’t have the Torani coffee syrup or the Mocha Skinny Syrup you can just use your favorite sweetener and a stronger type of coffee for that coffee flavor.
- I like Isopure Zero Carb Protein Powder because they have no carbs but you can use whatever protein powder you want.
- I used half of a box of sugar free vanilla pudding. Just the powder though.
Low Carb Coffee Popsicles
I really enjoyed these because I love iced coffees in the summer and these popsicles taste just like that but with low carb cereal added for extra fun. I ate these as an afternoon snack myself but they would be absolutely acceptable for breakfast. Enjoy!

- 14 grams sugar free vanilla pudding mix (½ box of 1oz box)
- 1 ½ cups Magic Spoon Frosted cereal (optional)
