Mint Chocolate Chip Keto Ice Pops – Easy Sugar Free Dessert!

These mint chocolate chip keto ice pops cool you off this summer two ways! Both as a sugar free popsicle type of cold treat and with it’s cooling mint flavor! Only 3.2g net carbs per keto ice pop!

I remember many, many years ago I went through a mint chocolate chip ice cream phase. I haven’t had that flavor in ages but after the success of my cookie dough keto pops I thought about it again. So today I give you these mint chocolate chip keto ice pops. They are really easy to make, creamy, sweet and full of minty flavor. Each sugar free ice pop only has 3.2g net carbs too!

Other Low Carb Desserts From The Freezer

Below are 3 of my favorite low carb desserts to keep you cool this summer. The low carb jello pops is a very popular recipe and only needs 2 ingredients! The peanut butter cream cheese bites are made from large ice cube molds and the strawberry pretzel-less pop is a play on that classic summer dessert.

These peanut butter cream cheese bites are the perfect little treat for those on a low carb diet or even if you aren't.
Just in time for hot summer weather, try these low carb strawberry pretzel-less pops. Imagine strawberry jello, creamy cheesecake and a gluten free crust wrapped up in a popsicle form. Your favorite summer dessert on a stick and it's only 3.6g net carbs per pop.

Ingredients For These Sugar Free Ice Pops

There are not too many ingredients to make this recipe. I used cream cheese, heavy cream, Swerve powdered sweetener, peppermint extract and Lily’s chocolate chips. Note I also use green food coloring to make them a bit green but it’s totally not necessary.

Mint Chocolate Chip Keto Ice Pops Recipe

The first thing you do is whip together with a mixer, the softened cream cheese and Swerve sweetener. Next you add in the cream and peppermint extract. You want the finally result to be light and cream like the picture above. You don’t want to whip in too much air or it will get hard to spoon into the mold.

Next add the food coloring if using, mix and then fold in the chocolate chips. I had to spoon the mixture into my popsicle mold. Lastly add your popsicle sticks and place them in the freezer. 

How Long Should You Freeze Your Homemade Pops?

I like to freeze my ice pops overnight however they will be done in 4-6 hours. One thing I want to mention is that if you leave them overnight they will be hard when they come out of the molds. You might want to let them sit for a few minutes before eating and they will be nice and creamy.

How Should You Store Homemade Ice Pops

To be honest, I usually just keep mine in the mold. However with my low carb jello pops, I made lots of them. So to store popsicles, I used those very inexpensive sandwich bags like these and put each popsicle in one.  Then I would put them in a large sealed baggie.

You can also lay them on a sheet of wax paper and place in a seal tight container and place in the freezer. This is much more bulky though.

Notes about this keto ice pops recipe

  • These are very minty! My husband and son both said it was strong but that was what they liked about it. So I would suggest using ½ of the peppermint extract, taste and then add more if you want.
  • If they are too hard to eat, just let them thaw for a few minutes and they will be creamy and soft.
  • These sugar free pops are not naturally green. I used green food coloring because I thought they looked nicer. You of course do not have to.
  • If you don’t have Lily’s chocolate chips, you can take your favorite low carb chocolate bar and using a peeler, make chocolate ribbons. Or chop it into small chip like pieces.

Well these were a big hit in my house!  If you like mint chocolate chip ice cream you will not be disappointed. I think my next flavor is going to be peanut butter or strawberry cheesecake. The nutritional information for 1 pop is:

172 cals / 17.3g fat / 4.7g carbs / 1.5g fiber / 2g protein = 3.2g net carbs

Ingredients

  • 4 oz cream cheese, softened
  • â…“ cup Swerve powdered sugar sweetener
  • 1 cup heavy whipping cream, cold
  • ½ – 1 teaspoon peppermint extract
  • 6 drops green food dye (optional for green color)
  • 3 tablespoons Lily's mini chocolate chips

Instructions

  1. In a mixing bowl add the softened cream cheese and Swerve sweetener.

  2. Cream together and then add in the peppermint extract and cream.

  3. Beat until nice and fluffy.

  4. Add your color drops now if using. Then fold in mini chocolate chips.

  5. Spoon into molds and add your popsicle sticks.

  6. Place into freeze for 6-12 hours.
