These mint chocolate chip keto ice pops cool you off this summer two ways! Both as a sugar free popsicle type of cold treat and with it's cooling mint flavor! Only 3.2g net carbs per keto ice pop!

Ingredients

  • 4 oz cream cheese, softened
  • 1/3 cup Swerve powdered sugar sweetener
  • 1 cup heavy whipping cream, cold
  • 1/2 - 1 teaspoon peppermint extract
  • 6 drops green food dye (optional for green color)
  • 3 tablespoons Lily's mini chocolate chips

Instructions

  1. In a mixing bowl add the softened cream cheese and Swerve sweetener.
  2. Cream together and then add in the peppermint extract and cream.
  3. Beat until nice and fluffy.
  4. Add your color drops now if using. Then fold in mini chocolate chips.
  5. Spoon into molds and add your popsicle sticks.
  6. Place into freeze for 6-12 hours.
