My friend Lisa introduced me to Thai iced tea. She ordered it in a restaurant and next thing I know she was stopping at the Asian store and buying the Thai tea mix. One day I bought a bag too. I thought it would be cool to add some chia seeds to sort of be like the tapioca balls in bubble tea.
So today I give you my low carb Thai tea chia seed drink recipe. It has all the flavor or iced Thai tea along with the chia seeds to make it more of a bubble tea!
Ingredients For Thai Tea Chia Drink
To make this chia drink recipe you only need chia seeds, water, coconut milk, Swerve sweetener and most importantly Thai tea mix.

Why I Like Chia Seeds
One of the reasons I like chia seeds is their cool ability to soak up liquid. Whatever liquid you put them in, they will swell and make a gel like substance perfect for chia drinks or even chia pudding! They are also very filling because they are high in fiber.

Let’s Make This Thai Tea Chia Drink
First thing you want to do is soak your chia seeds in the Thai tea. So make 3 cups of tea and let I come down to room temperature. Mix 3 tablespoons of chia seeds in with 1 cup of the Thai tea. Refrigerate for an hour so they soak up the tea and look like the picture above or below.
While the chia tea is in the refrigerator, heat the coconut milk with the Swerve confectioners sweetener on the stove. You just want the sweetener to dissolve and mix well with the coconut milk then you can take it off the heat.
Now to make the final chia drink. I added the rest of the tea (2 cups) to the chia seed mixture. The reason I didn’t do this from the start is that I wanted to make the right consistency of the drink for me.
You might want to play around with how much tea you put in. But altogether this ratio (3 cups tea) made 2 chia drinks for me.
Next you add as much of the coconut milk mixture you want. This is the creamy sweetness you are adding to the drink and I think it’s a personal amount. But the 1 cup of sweet coconut milk should be more than enough for 2 drinks.

Other Low Carb Chia Seed Recipes To Try
Can I use regular black tea?
Yes. The Thai tea mix just has red and yellow food dye to make it that pretty reddish orange color. If you are only going for the taste, brew strong black tea and maybe add a bit of vanilla extract.
Do I have to use coconut milk?
You can also use heavy cream or half and half. If you are not worried about carbs you can use sweetened condensed milk but if you do, eliminate any added sugar.
How much of the coconut milk mixture should I add?
You can add as much or as little as you want. Just like some people like milk in their tea with 3 sugars and other like it straight. It’s all about your taste.
How long should I soak the chia seeds?
I would try to give it at least an hour so it will soak up as much liquid as possible. Because there is only a finite amount of liquid they can absorb, 1 hour should do it.
Low Carb Thai Tea Chia Seed Drink

Ingredients
- 4 tablespoons Thai Tea Mix
- 3 tablespoons chia seeds
- 3 cups water
- 1 cup coconut milk
- ½ cup Swerve confectioners sweetener
Instructions
- Brew the Thai tea mix with 3 cups boiling water. Strain and bring to room temperature.
- Mix 3 tablespoons of chia seeds with 1 cup of the tea. Refrigerate for 1 hour.
- Meanwhile add the Swerve sweetener with the coconut milk. Whisk and bring to a simmer, then turn off and let come to room temperature.
- To make the chia drink, take half of the finished chia seeds and add 1 cup of the remaining Thai tea. Mix well and then pour in as much of the sweetened cooconut milk as you wish.
- The quantities I've used should be able to make 2 drinks and the coconut milk should be enough for at least 2 drinks maybe more depending on how much you use. The reason I don't mix all of the iced tea with the chia seeds from the beginning is so you can control the thickness of final drink.
