I bought a big container of blueberries the other day for my blueberry muffins and didn’t know what to make until I remembered this easy blueberry recipe my mom used to make.
Today I decided to take out the carbs and made this easy keto blueberry ice cream in my blender. No ice cream maker necessary. It only needs a few ingredients and you can have soft serve sugar free ice cream in minutes. Then you can freeze it for a harder ice cream. So easy and delicious and only 6.5g net carbs!
Healthy Blueberries Are Low Carb Too!
While many fruits are very high in sugar, most berries are keto friendly. Blueberries have the added benefit of being very good for you.
They are low in calories but high in fiber and vitamins such as C and K. They are also rich in antioxidants and can be good for hearth and brain health.

Keto Blender Ice Cream 3 Ingredients
All you need to make this ice cream recipe is 3 ingredients which are frozen blueberries, heavy cream and Swerve confectioners sweetener which is powdered erythritol. You need to use frozen blueberries if you want to eat this right away as soft serve ice cream.
If you are going for a no churn ice cream you can probably use fresh blueberries but you will have to freeze for a few hours before you eat it.
Easy Way To Freeze Fresh Blueberries
- Wash your blueberries and dry well to get all the extra moisture off them.
- Lay them out on a cookie sheet and place in the freezer.
- Freeze overnight then add them to a freezer baggie and store back in the freezer.
Let’s Make Some Keto Blueberry Ice Cream!
This is super easy. Just add the frozen berries, heavy cream and sweetener to a high speed blender. I use my Vitamix for recipes like this because they really puree the blueberries well. But you can use any blender or even a food processor.
Blend and scrape down the sides until you get a nice cream ice cream like that pictured below. Taste your blender ice cream and if you want it to be sweeter add a bit more Swerve.
The blueberries have a bit of tartness that I just love with the cream and sweetener. However you might like it sweeter.
Now you can eat it right away for a soft serve ice cream. I think it tastes best this way and often make this for my family.
Or if you want a hard ice cream you can add the cream mixture to a shallow freezer safe container and freeze for a few hours.
Note: This will get pretty hard and you might have trouble scooping. So I just leave it out on the counter for 15-20 minutes to soften or microwave it for 30-60 seconds until it softens enough to scoop.

Ingredients
- 1 ½ cups frozen blueberries
- 1 cup heavy whipping cream
- 4 tablespoons Swerve confectioners sweetener (or other powdered erythritol)
Instructions
- Add all the ingredients to a high speed blender or food processor.

Coconut cream…is that something I would have to make or can I buy it that way? I actually had a recipe but can’t locate it. If it needs to be made from scratch, do you have a recipe?

Hi Deana, I actually used whipping cream but coconut cream would work to. You can definitely buy it in a grocery store. I’ve bought it at Trader Joes and some bigger grocery stores. Not sure how to make it. You could also just use coconut milk.Good luck!
