Low Carb Scone Ingredients
Below you can see the dough for these scones along with fresh red cranberries that are in season now. The ingredients are almond flour, sweetener, baking powder, salt, coconut oil, vanilla, orange zest, eggs and cranberries
Note you can use fresh or frozen cranberries.
Let’s Make Some Easy Keto Cranberry Orange Scones!
So you mix the dough together with everything but the cranberries like the pic above. Next you flatten it out on a silicone mat covered cookie sheet or you can use parchment paper. Next push in your cranberries into the dough.
Now you want to gently cut the dough into 8 pie pieces and move them a part to cook.
Pop them in the oven and bake for about 18 – 22 minutes until golden brown.
Make sure to let them cool before eating. I really loved the texture of these scones and I can’t wait to make another batch or two and freeze them for our breakfasts. They were delicious with a good cup of tea for an afternoon snack too.
Well my family thoroughly enjoyed these low carb scones and I hope you do too. Please check out Maya’s cookbook as it’s really a good one. I have many cookbooks but this is sincerely one of my favorite keto cookbooks. Again you can find her keto cookbook here.

Easy Keto Cranberry Orange Scones
If you crave something a little sweet with your coffee or tea in the morning, you will love these easy keto cranberry orange scones. You only need a few ingredients and it takes little time to make. I froze a few for a quick keto breakfast on the go. Each scone has only 4g net carbs!
Â
Ingredients
- 2 cups blanced almond flour
- â…” cup erythritol (I like Swerve sweetener)
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ¼ cup coconut oil, melted
- 2 tablespoons orange zest
- ½ teaspoon vanilla extract
- 1 egg
- ½ cup (2oz) cranberries, fresh or frozen
Instructions
-
Preheat the oven to 350°F. Line a baking sheet with parchment paper.
-
In a medium bowl, combine the almond flour, erythritol, bakingpowder, and sea salt.
-
In a small bowl, whisk together the melted coconut oil, orange zest, vanilla, and egg. Stir the wet mixture into the almond flour mixture, pressing with a spoon or spatula, until a uniform dough forms. (The dough should be pliable and dense, but not crumbly; add a little more coconut oil, a teaspoon at a time, if it’s very dry.) Stir and press the cranberries into the dough.
-
Place the dough onto the lined pan and form a disc shape, about 1 inch thick and 6 inches in diameter. Cut into 8 wedges, like a pie or pizza. Move the pieces about 1 inch apart. Bake for 18 to22 minutes, until golden.
-
Cool completely on the pan to firm up. (Scones will fall apart if you move them before cooling.)
