I love a good hearty soup on a cold winter day and today this easy keto cheeseburger soup does the trick. It’s loaded with ground beef, cheese and bacon but it gets it’s creaminess from cauliflower cream.
If you are looking for a soup that is more like a meal, this keto soup is the one. Just serve this it with a nice green salad to complete the meal.
Why I Love This Soup Recipe
I have a lot of soup recipes on this blog so it’s safe to say that I really like soup as does my family. When I made this I was in the mood for my keto cheeseburger casserole and thought this would be a quicker substitute.
I love it because it’s a filling, chunky soup and while there is cheese and bacon, it’s not all that heavy. That’s because I used cauliflower cream to light the creamy aspect of the soup. It’s definitely can be a meal in of itself though.
How To Make Cauliflower Cream
Cauliflower cream is a thick creamy sauce made with pureed cauliflower. It’s great for thickening creamy soups and casseroles without flour. So if you are gluten free or gluten intolerant, this is a great option for you!
The creamy sauce is pretty easy to make. You cut the cauliflower into florets and boil/steam them in a covered pot. When they are very tender, you add them to a high speed blender or food processor along with olive oil, seasonings and some of the cooking liquid. Blend until it has a smooth and creamy texture like the picture below.
If it’s too thick like mashed potatoes add a little more liquid. You should be able to pour it out of the blender though it should be pretty thick.
Let’s Make This Keto Cheeseburger Soup Recipe
So the steps to make this low carb soup in a nutshell are:
- Start by browning the ground beef in a soup pot along with some steak seasoning.
- At the same time, cook the cauliflower florets on the stove. Once they are fork tender, make the cauliflower cream but save some of the cauliflower for the soup.
- By the time the beef is done, you can add in cooked cauliflower, cauliflower cream, Better than Bouillon, cheese and some water.
- Let that all simmer together for 5 minutes and you are done!
- You can top your cheeseburger soup with more cheese and even crumbled bacon.
Other Garnishes You Can Use
For my bowl of cheeseburger soup, I added more cheese and crumbled bacon. But other things you can try are a dollop of sour cream, green onions and or chives. All of these flavors would complement the soup.
However you can just stick to cheese if you want. But the bacon is nice…. just saying.
Recipe Tips And Notes
- Note that when you cook the cauliflower, you are using 3 cups for the cauliflower cream and the remainder is going in the soup.
- I used only half of the cheese in the soup so that I could top it with the remainder cheese. However you can add it all to the soup if you wish.
- The soup itself is rather thin. If you want it thicker, you can not put as much broth in as I did.
- I used beef flavored Better than Bouillon and I high recommend it because it adds so much flavor to soup. If you don’t have any you can use regular bouillon or beef stock.
- I also used steak seasoning on the ground beef to give it that burger taste. If you don’t have any, try some salt, pepper, garlic powder and onion powder.

Easy Keto Cheeseburger Soup
This easy keto cheeseburger soup has all the makings and taste of a cheeseburger but in a lighter, low carb soup. Top it off with some crumbled bacon and cheddar cheese to make a low carb meal the whole family will love. This hearty soup uses cauliflower cream to make it creamy and it's so easy to make. Â Each serving has only 5.0g net carbs.
Ingredients
- 1 lb ground beef (lean)
- 2 tablespoons olive oil (divided)
- 2 teaspoons steak seasoning
- 5 cups of cauliflower florets
- 1 teaspoon dried minced onion
- 2 cloves of garlic, minced
- 2 tablespoons parmesan cheese
- 2 teaspoons Better Than Bouillon (beef)
- 4 oz sharp cheddar cheese, grated and divided
- cooked crumbled bacon (optional as topping)
Instructions
- In a large soup pan, add 1 tablespoons of olive oil to heat up. Then add the ground beef and sprinkle the steak seasoning over top.
- Meanwhile add the cauliflower florets in a large pot and cover almost to the top with water. Bring to a boil and then simmer until the cauliflower is fork tender.
- Drain the cauliflower but save some of the water. Add 3 cups of the cauliflower to a high speed blender along with the remaining 1 tablespoon of olive oil, parmesan cheese, dehydrated onion and garlic. Blend until nice and creamy. If it's thick like mashed potatoes, add a litte of the reserved water until it's thin enough to pour.
- When the meat is browned, add in the cauliflower cream plus the remaing cooked cauliflower.
- Then add in half of the grated cheddar and mix until it melts.
- Then mix the Better than Bouillon with 2 cups of water. Add it to your soup and mix well. Let it cook for 5 minutes until well combined. (Note if you want this to be thicker, add less water to the Better than Bouillon.
- Serve in bowls then add the remaining cheddar on top. You can also add crumbled cooked bacon if you wish.
