Last week I made my practice keto Easter ham and had a lot of leftover ham. So I put together this crustless keto quiche with ham, spinach and cheese. It came out so fluffy and tasty and I only used 5 ingredients.
Quiche is one of the most perfect foods for low carb diets. And it’s great to make and eat all week or even serve a crowd. You can also freeze individual servings for a quick breakfast or lunch.
So if you have leftover ham for Easter I highly recommend making this keto quiche recipe. It’s a quick and easy meal and perfect for a low carb breakfast, lunch, dinner or really any time of day.
The 5 ngredients I used.
All you need to make this crustless quiche recipe are 5 low carb ingredients: eggs, heavy cream, gruyere (or Swiss) shredded cheese, chopped spinach and cooked ham. Oh and you need a little salt and black pepper too.
While I used gruyere cheese (which you can easily get at Aldi) you can use Swiss cheese, cheddar cheese or any other flavorful cheese. Gouda would also be a nice one to try.
Let’s make this crustless keto quiche recipe!
Crustless quiche recipes are very simple since no pastry is involved and you won’t miss the crust at all. So this is how you make it:
- Preheat the oven to 375°F.
- First add the eggs, heavy cream, salt and black pepper to a blender and blend for 30 seconds or so to get it nice and combined.
- Pour into a big bowl and mix with the chopped ham, chopped spinach and shredded cheese. (Frozen spinach would make it watery.)
- Spray a pie plate baking dish with cooking spray and then pour the mixture in. Sprinkle the remaining cheese over the entire quiche.
- Place in the oven and bake for 40-45 minutes until cooked through and nicely browned. You can use a toothpick in the middle of the quiche to make sure it’s cooked through.
- Let it cool before slicing.
Other keto flavor combinations to try.
The basis of this crustless quiche is just eggs and cream + meat + veggies + cheese. So you can vary the types of meat, veggies and cheese to make other flavors.
- Try Mediterranean flavors like sun dried tomatoes, basil, oregano and feta cheese.
- For a buffalo chicken flavor you would be using cooked chicken, cheddar cheese and hot sauce or pepper flakes.
- Try a western omelet flavor with ham, green peppers and onion.
- You could substitute bacon for the ham to make a spinach bacon quiche. Or skip the veggies and go for a straight bacon & cheese!
- Other ingredients to try are chiles, jalapenos, asparagus, zucchini, broccoli, bacon, turkey, various cheeses and spices.
I would still use the cream in quiche because it gives it a richer flavor and when using a blender it makes the eggs nice and fluffy.

- Try to use the blender for the eggs and cream as it whips up and makes the eggs nice and fluffy.
- Check on your quiche towards the end to make sure it’s not browning too much on top.
- Cooking times may differ depending on the size pan you use. Note you could use a cast iron skillet as well.
- You can vary the flavor with the meats, cheese, vegetables and spices you use. I used roughly 1 ½ cups of meat and vegetables and 1 ½ cups of cheese.
- You can freeze this for a quick keto breakfast on the go. Just store individual servings in a air tight container and microwave to reheat.

This low carb quiche was a really yummy breakfast for me but I also ate it for dinner one night. It goes nicely with a green salad and is the perfect meal for using that leftover ham from Easter too!

Crustless Keto Quiche with Ham & Spinach
This easy keto crustless quiche is a fluffy eggs bake with ham and cheese but not crust so it's gluten free! A great way to use leftover ham for a low carb meal.
Ingredients
- 10 eggs
- 1 cup heavy whipping cream
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 cup ham, chopped into small pieces
- 2 cups fresh spinach, chopped
- 1 ½ cups shredded gruyere or Swiss cheese
Instructions
- Preheat the oven to 375°F.
- Add the eggs, heavy cream, salt and pepper to a blender and blend for 30 seconds or so to get it nice and combined. This will make the quiche nice and fluffy.
- Pour the egg mixture into a big bow with the ham, spinach and 1 cup of the cheese and mix well.
- Spray a pie plate baking dish with cooking spray and then pour the mixture in. Add the remaining ½ cup of cheese on top.
- Put in the oven and bake for 40 minutes until cooked through and nicely browned on top.. A toothpick in the middle of the quiche should come out clean if it's cooked through. You don't want to over cook it though.
- Let it cool before slicing.
