Do you ever look into your freezer and think to yourself, “I’ve got to use some of this or throw it away.” That was me with these frozen cod filets I had from Costco. I’m not much of a cod fan. I don’t think it has much taste but it’s very meaty and great for deep frying. However I have not come across a good low carb batter so I made a super rich and savory sauce instead resulting in this  low carb creamy sound dried tomato cod skillet. The sauce is perfect for the mild tasting fish and it’s only 1.6g net carbs per serving!

Make Your Own Sun Dried Tomatoes

My husband has been using my dehydrator all summer and one of the things he loves to make are sun dried grape tomatoes. He calls them tomato raisins and they are great to eat as a snack. You can read all about it here. It’s really easy to do and I like to just freeze them. You don’t need to make your own, though. Just use any type you find in the grocery store.

Creamy Sun Dried Tomato Cod Recipe

First you want to get a large saute pan and heat some oil. Add your cod pieces and brown on both sides. Then you want to take out the fish and make your creamy sun dried tomato sauce. You do this by melting the cream cheese in the pan with the cream, garlic, water and sun dried tomatoes. Whisk it well to combine and then add the fish back into the pan. Cover and cook for about 10 minutes until the fish is cooked through.

This sauce is very thick and creamy. I added some water to thin it out a bit. You can add a bit more if you want or even a little broth. If you want to use the sauce for something other than the fish (like pasta or rice) you might want to double the recipe. I just served this with some sautéed vegetables and it was perfect!

This dinner can be made in about 30 minutes. You can use this sauce with chicken or other types of fish too. The nutritional information for 1 serving is:

Ingredients

  • 4 cod filets (roughly 6oz each)
  • 2 tablespoons butter
  • salt and pepper
  • ¼ cup sun dried tomatoes, diced
  • ½ cup cream
  • ¼ cup water
  • 2 cloves garlic, crushed
  • 2 oz cream cheese

Instructions

  1. Season your filets with salt and pepper. Then add the butter to a large saute pan and bring to medium high heat. 

  2. Brown filets on both sides then take out of pan.

  3. Add the cream cheese, cream, tomatoes, garlic and water to the pan. Whisk until the cheese is melted and everything comes together.

  4. Add back the fish and spoon the sauce over the filets. Cover and cook for 10 minutes or until the fish is cooked through. 

  5. Serve immediately.
