I have not made this pork tenderloin with fig sauce recipe for a such a long time but I had some dried figs and remember it. Originally I made this recipe and made a mistake and it ended up being really tasty!
I love making pork medallions with a creamy sauce and have quite a few recipes with it. The meat is so tender and the creamy sauce makes it more like a decadent meal but very easy to make. The figs add a bit of sweetness along with the caramelized onions. And it all adds up to an easy but delicious dinner in just 35 minutes!
Recipe ingredients and substitutions.
The simple ingredients I used were pork tenderloin, chicken broth, heavy whipping cream, dried figs, rosemary, salt, black pepper, butter, olive oil and onions.
- Pork Tenderloin – This is a very tender cut of pork and I don’t think it would be good with pork loin which is very lean. However it would also work pork chops especially a center cut or rib end cut. This would probably also work with chicken cutlets or chicken thighs.
- Heavy Cream, White Wine Vinegar and Broth – You can use any kind of broth or stock you want and even water in a pinch but the broth adds a bit of flavor. I used white wine vinegar but you could substitute with apple cider vinegar and the heavy cream is pretty essential for the cream sauce.
- Dried Figs and Onions – I used regular white onions and any kind would work well. I also used black mission figs but any dried fig will work. I would not waste fresh figs on this dish and I think they would get too mushy anyway. You could substitute with dates if you don’t have figs. I think prunes might also work but I have not tried it.

How to make pork tenderloin with fig sauce.
Step 1: Get out the pork tenderloin and slice into ¼ inch pieces. To pound them thinner and flatter I like to place the pieces in a baggie and the pound them a little with a meat tenderizer. Do this to all of the pieces and place on a plate. Sprinkle some salt and black pepper over top and set aside.

Step 2: Get out a large saute pan or skillet and heat to medium high heat. Add the olive oil and let heat up. Then place the pork pieces into the skillet and brown on both sides. About 2-3 minutes on each side should do it. When done, take them out and set aside.

Step 3: In the same skillet add the butter over medium heat and then the onions. Saute for about 5 minutes until they start to brown. Then add the dried figs, vinegar, chicken broth and rosemary.

Step 4: Cook for a few more minutes and then add the heavy cream. Mix well and once the sauce comes to a simmer add back the pork cutlets. Cook for 5 more minutes until the meat is cooked through and that’s it! The internal temperature should be 145°F using a meat thermometer.

You could eat this with mashed potatoes, rice or even egg noodles. We just ate it as is as I’m usually eating low carb. So we just ate this with a green salad and a vegetable.
If you decide to eat this over noodles you could also double the sauce mixture (creamy, broth, rosemary, figs and onions.) That way you will have more sauce to cover the noodles.

Pork Tenderloin with Fig Sauce Recipe
These tender pork tenderloin medallions are cooked in a decadent creamy fig sauce with caramelized onions. An easy but delicious dinner for any day of the week.
Ingredients
- 1 tablespoon oil
- 1 pound pork tenderloin sliced, pounded thin
- salt and black pepper
- 2 tablespoons butter
- 1 onion thinly sliced
- ¼ cup white wine vinegar
- ½ cup chicken stock or broth
- 1 teaspoon dried rosemary
- 6 dried figs chopped
- ½ cup heavy whipping cream
Instructions
- 
										Cut the pork tenderloin into medallions and pound with a meat tenderizer to ¼ inch thickness. To do this, place them in a baggie and pounded them thinner with a meat tenderizer mallet or a heavy pan. Place on a plate and sprinkle with salt and black pepper. 
- 
										Heat a large pan on high heat and when hot add the olive oil. 
- 
										Place the pork cutlets in the pan and brown on both sides. This should take about 2-3 minutes on each side. You may have to do this in batches. Then take them out of the pan and set aside. 
- 
										Using the same pan, heat to medium heat and add the butter and onions. Saute for about 5 minutes until the onions begin to brown. 
- 
										Next add the vinegar, stock and rosemary to the pan and deglaze pan to scrape up the brown bits which have a lot of flavor. Add the figs and let cook for 3 minutes. 
- 
										Next add in the heavy cream and mix well. Cook for 2 minutes or until it starts to simmer. Add back the pork pieces and cook for another 5 minutes until the pork is cooked through. 
- 
										You can eat this as is or with rice or egg noodles. Store leftovers in an airtight container.
