This is an old post that I just rediscovered and made for myself. At the time I was finding new ways to eat strawberries and came up with this easy strawberry bean salad with mint recipe. I forgot how tasty it was!
The sweet and tart taste from the juicy strawberries go wonderfully with the creamy white beans and the mint adds a refreshing addition to this summer salad. And it’s tossed in a simple and light dressing. It only takes minutes to make and it’s very colorful so it would be great to take to a picnic or party.
I just ate it for lunch and it was very filling because of the cannellini beans which are also a good source fiber and protein. You can eat this with a piece of crusty bread and it would be a nice light summer supper as well. Below I’ll give you more ideas of what to eat with it.
Recipe ingredients I used and substitutions.
The salad ingredients I used in this recipe is fresh mint leaves, white beans, red onion, and strawberries. For the vinaigrette I used red wine vinegar, olive oil, fresh garlic, salt and ground black pepper.
White Beans
I used canned cannellini beans for this recipe. You could use other types of beans but I like these the best. Other beans you could use are northern beans, butter beans or kidney beans. These are pretty common and easy to find though.
Fresh Strawberries
Again this is a such a common fruit but if you have an allergy or something, this would also be great with fresh ripe tomatoes. I don’t think other berries would be as good to substitute but I think the tomatoes would go great. Also fresh juicy peaches might be good too.
Fresh Mint Leaves and Fresh Parsley
I love the cooling taste of fresh mint in salads, especially in the summertime. However if you don’t have any, you could use other fresh herbs like basil, rosemary, or just more parsley.
Red Onion and Fresh Garlic
I like the color and flavor of red onions but you can use regular white onion if you want. Also I love fresh garlic but in a pinch you can use a bit of garlic powder or eliminate it.
As for the dressing, I wanted it to be light in taste so I used red wine vinegar and a lighter olive oil. You could substitute with apple cider vinegar or white wine vinegar. Balsamic vinegar or extra virgin olive oil would work too but it’s a bit heavier.

This is a simple summer recipe in that I used canned beans and just sliced, chopped and mixed up the dressing. So it should just take a few minutes to make.
Step 1: Thinly slice strawberries and red onion. Then mince the fresh mint and parsley and add all to the salad bowl.
Step 2: Lastly drain and rinse white beans and add to the bowl too.
Step 3: In a small bowl add the olive oil, vinegar, salt, black pepper and crushed garlic to make the dressing. Whisk together and then pour over bean salad mixture and combine all ingredients.
Step 4: That’s all there is to it. You can garnish with a few extra mint leaves as well. Refrigerate until ready to eat and store leftovers in an airtight container. Please scroll down to view the printable recipe card.
This is a rather hearty salad recipe so you could eat this with some grilled chicken or even burgers on the grill. Or add a piece of good crusty bread for a delicious summer lunch.
I personally just eat it as is for lunch. The sweet, tart strawberries with the cool mint go perfectly with the starchy beans and the bite from the red onion. It’s simple but delicious.

This easy strawberry bean salad with mint is an easy dish to whip up . It's a refreshing salad that tastes and looks great on the table!
Ingredients
- 1 can cannellini beans, drained and rinsed
- ¼ red onion, thinly sliced
- 10 strawberries, sliced
- 2 tablespoons fresh mint, minced
- 1 tablespoon fresh parsley, minced
- 2 tablespoons red wine vinegar
- 3 tablespoons olive oil
- 1 clove garlic, crushed
- ¼ teaspoon salt
- â…› teaspoon black pepper
Instructions
- Drain and rinse the white beans and add to a large salad bowl.
- Add sliced strawberries and minced herbs (parsley and mint).
- In a separate bowl whisk vinegar, oil, garlic, salt and pepper.
- Pour over bean mixture and mix well to combine. Refrigerate until ready to eat.
- Store leftovers in an airtight container.
