Easy Strawberry Mint Bean Salad – For A Tasty Summer Side Dish

This strawberry mint bean salad is an easy dish to whip up for a summer side dish. It’s fresh and tasty and looks great on the table!

When the strawberries come in season I can’t wait to makes a few recipes with them. In the past I’ve made a strawberry caprese salad and more recently low carb chocolate strawberry treats, so I can appreciate these red, juicy berries as much as anyone.

I got the idea to mix strawberries with mint, while watering the vast amount of mint in my garden. Turns out it was a great pairing. This easy strawberry mint salad recipe is so fresh and delicious. It’s  the perfect quick and easy summer side dish or even as a lunch.

Using Fresh Strawberries

I got these cute little strawberries above from the farmer’s market. They are from a fantastic farm close to me called Triple B Berry Farm and if you are ever in the area, I would highly recommend you check then out.

They have so many children’s activities year round and a great selection of fruit and produce. Next to the strawberries is a sprig of my peppermint plant. I love cooking with fresh herbs, especially those from my garden, and I’ve used some of my parsley too.

You can whip this side dish up in just 5 minutes.

Making This Easy Strawberry Mint Bean Salad

I used canned cannellini beans today because I told you this was a quick and easy recipe. The dressing is simply oil and vinegar and of course garlic.

 So add everything to your bowl, pour your dressing, mix and eat. The sweet, tart strawberries with the cool, green mint go perfectly with the starchy beans and the bite of a red onion.

Another nice thing about this recipe is that you can use just about any fruit that is season. Next time I’m trying peaches or even blueberries. Well I hope you like this quick and easy summer side salad. Remember it’s hearty enough to eat as a lunch too!

Easy Strawberry Mint Bean Salad

This easy strawberry mint bean salad is an easy dish to whip up . It’s fresh and tasty and looks great on the table!

Ingredients

  • 1 can cannellini beans
  • ¼ red onion, thinly sliced
  • 10 strawberries, sliced
  • 2 tablespoons fresh mint, minced
  • 1 tablespoon fresh parsley, minced
  • 2 tablespoons vinegar
  • 3 tablespoons oil
  • 1 clove garlic, crushed
  • ¼ teaspoon salt
  • â…› teaspoon pepper

Instructions

  1. Drain and rinse the beans and add to a large bowl.
  2. Add strawberries, parsley and mint and mix to combine.
  3. In a separate bowl whisk vinegar, oil, garlic, salt and pepper.
  4. Pour over bean mixture and mix well.
  5. Refrigerate until ready to eat.

    What a clever way to use mint! I bet it tastes really refreshing with the sweet and tart taste of the strawberries and the beans, I would imagine, make a nice base for all of the flavors to shine.
