Every once in awhile I buy a big bag of power greens from Costco and then I don’t really have a plan for how to use it. I use in smoothies sometimes or as a salad but then I got the idea to make these slow cooker greens Alfredo. I used the whole bag of greens and a creamy, rich Alfredo sauce and it was done in an hour! Even my son and husband enjoyed it as a low carb side dish.

What Can You Do With This Low Carb Side Dish?

We ate this creamy greens as a side dish with pork chops. However you can do a few things with this dish. You can stuff a chicken breast with it, top a salmon burger or mix it with rice or pasta (if you are not low carb). This recipe is really dense and little goes a long way.

What Are Power Greens?

Below is the bag that I bought from Costco. It is made up of baby chard, kale and spinach.  Since they are baby greens, they are very tender. This is a huge bag (24 oz) and these greens are a good source of vitamin C. If you don’t want to use them all, I have used them in some of my smoothies for more nutrition.

How To Make Slow Cooker Greens

This slow cooker greens recipe only takes about 1 hour in the slow cooker on a high setting. On high they will steam and release their own liquid which will mix with the cheesy Alfredo mixture.

Low Carb Slow Cooker Greens Recipe

Start by turning your slow cooker on high. You want to melt the cream cheese a bit so that you can make the Alfredo sauce. So add the cream cheese, cream and Parmesan cheese and as it melts, whisk to combine. Once it’s fairly well combined add the garlic, salt and pepper. It will be pretty thick so mix as well as you can. Then add the greens and put on the lid.

Halfway through, give your greens a stir. They will be pretty wilted and will mix well. As soon as they get the consistency you want, take them out. I kept mine in for an hour.

There was quite a bit of liquid in this dish but I liked it that way. You could decrease the cream if you don’t yours that way. This recipe makes about 8 servings so you can cut it down if you wish. The sauce is very rich and tasty and the nutrition for 1 serving is:

223 cals / 18.5g fat / 5g carbs / 1g fiber / 7.5g protein = 4g net carbs

Ingredients

  • 24 oz power greens (baby kale, chard & spinach)
  • 1 cup heavy cream
  • 2 cups Parmesan cheese, grated
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 teaspoon garlic, chopped
  • 4 oz cream cheese

Instructions

  1. Turn on the slow cooker to high. Add the cream cheese, cream and Parmesan. Whisk well as it melts. Then add in garlic, salt and pepper.

  2. Put all of the greens and cover with lid. Cook for about ½ hour and stir.

  3. Put lid back on and cook for another ½ hour until the greens and cooked well or to your liking.

  4. Serve  as a side dish or use to stuff chicken, or with pasta or rice.
