Well it’s back to school time and I keep picturing that old commercial where the mom and dad are pushing a cart around buying school supplies and singing “it’s the most wonderful time of the year”. That always made me laugh though I really enjoyed having my son home this summer.
Anyway today we are celebrating back to school dinners at Sunday Supper and I’ve been craving this keto slow cooker chicken with creamy tomato & spinach dish.
It’s rich and creamy and packed with spinach. You can eat it over pasta, zucchini noodles or just as it is. Make sure you make a lot because it goes fast!
Recipe Ingredients.
The ingredients I used in this keto slow cooker recipe was boneless chicken breasts, sun dried tomatoes, spinach, broth, garlic, Italian seasonings, cream cheese and asiago cheese.
I wanted to have that cheesy spinach texture so I added the spinach at the end so it didn’t shrink too much. The sun dried tomatoes and cheese really added flavor to the creamy sauce.
Let’s Make Some Keto Slow Cooker Chicken!
- First add the broth, garlic, tomatoes and Italian seasoning to the slow cooker and whisk to combine.
- Place the chicken breasts on top and cook on high for 3 ½ hours.
- Take out the chicken and add the cream cheese and shredded Asiago cheese. Put on the lid and let cook for 5 minutes then whisk to combine and make the creamy sauce.
- Next add in the spinach, mix, cover and cook for 10 minutes.
- Now you can add the chicken back into the crock and warm up for a few minutes. Or you can just place on a platter and pour the creamy spinach and sauce over top.
- Serve over zucchini noodles for a low carb dinner or pasta if you are not low carb.
As you can see below I ate mine over zucchini noodles. Using this handy dandy kitchen tool I quickly made zucchini noodles. This is the perfect dish for veggie noodles as there is so much taste in the sauce.
Of course my hubby and son ate this with pasta. By the way, it also tastes great on it’s own without a side dish.
Recipe Notes & Tips
- I made this recipe using the high setting on my slow cooker. It took less than 4 hours from start to finish.
- Try to whisk the cream cheese and asiago cheese as well as you can when you add it towards the end. If you want to keep it in slow cooker for longer to melt the cheese that is fine.
- I added the spinach towards the end because I wanted it to be bulkier. If you want you could add it at the beginning. It might shrink up quite a bit but it should be fine.

Keto Slow Cooker Chicken with Creamy Tomato & Spinach
This slow cooker creamy tomato chicken & spinach dish is full of flavor and easy for a weeknight dinner. The rich and creamy sauce is perfect with the fresh spinach and chicken and only 3.3g net carbs!
Ingredients
- 2 lbs chicken breasts, boneless skinless
- ½ cup sun dried tomatoes, chopped
- 1 cup chicken broth
- ½ teaspoon Italian seasoning spice
- 2 cloves of garlic, crushed
- 4 oz cream cheese, cut into cubes
- ½ cup Asiago cheese, shredded
- 8 oz raw baby spinach, chopped
Instructions
- Place the tomatoes, broth, garlic and spices in the slow cooker and mix well. Then place the chicken breasts on top. If your chicken breasts are large you can cut them in half if you want.
- Put on the lid and cook on high for 3 ½ hours.
- Then take out the chicken and set aside. Add the cubed cream cheese and shredded Asiago cheese.
- Cover and cook for 5 minutes to melt the cheeses then take off the lid and whisk until smooth and creamy.
- Add in the spinach and cover and cook for 10 more minutes then mix well so spinach is wilted and combined with the sauce.
- Place the chicken back in the slow cooker or on a platter and pour the sauce over top.
- Serve over rice, pasta or for a low carb option use zucchini noodles.

What kind of sun dried tomatoes are you using? When calculating mine a half cup of sun dried tomatoes adds up to 48Gs of carbs

Hi Dyllan, I used sun dried tomatoes packed in oil. I use the Lose It app and that came up as a verified entry.
I also just looked it up on this site and it has similar numbers though you could only look up 1 cup and we used 1/2 cup.

Could this be cooked in the instant pot?

Hi Melissa,
I have never done it and I think it would be a bit more watery but I guess you could do it. I would just cook it for about 8 minutes and aad the spinach after it’s done. It will wilt right away.
It would be easier to just do it on the stove if you don’t want to use the slow cooker.
I would brown the chicken on both sides, take them out and set aside. Then add all the ingredients except the spinach and whisk together to make the sauce. Add back the chicken and let it simmer until the chicken is cooked through. This could take 10-20 minutes…I’m not sure. Then ad the spinach at the end and just let it wild. You might have to take the cooked chicken out of the pan first to make enough room for the spinach but it will shrink down to almost nothing very quickly.

Can I sub frozen spinach ?

Hi Laura, yes you can use frozen spinach but I would thaw it first and wring out as much water as possible from it. And then just add it at the end and let it get warmed up and mixed in. Good luck!
