I don’t know why but I was in the mood to make a red white and blue keto jello dessert. We are not doing much this Memorial Day but I was still in the mood to play around but wanted a dessert with no baking.
What’s different about this recipe is that I used unflavored gelatin and sugar free drink mixes to make the colored flavored sugar free jello. I also use the drink mixes in the cheese cake topping.
Recipe ingredients I used.
You only need a handful of ingredients to make this dessert. Instead of using boxes of sugar free jello, I made my own. So the only ingredients I used for this recipe is unflavored gelatin powder, sugar free drink mix, cream cheese, heavy cream and fresh berries (not frozen berries).
The drink mixes act as both the coloring and the flavoring. No need for sweetener because they have that too!
And because the mixes come in all kinds of flavors and colors you aren’t limited to the few flavors or sugar free jello mixes you find at the grocery store.
The drink mixes I used.
I bought my drink mixes from a variety pack I got at Aldi. The blue layer was Berry Blue and the red was Fruit Punch. You can use a lemonade flavor for the cream cheese layer or any flavor that will keep it’s white color.
You can find these mixes in just about any store. I find the one’s at Dollar General are very inexpensive and there’s a wide choice of flavors. Here is some that you can get on Amazon that would have all the colors and flavors for this recipe. But honestly you can find them anywhere.
How to easily make your own sugar free jello.
If you love jello, try making your own sugar free jello with the drink mixes and unflavored gelatin powder. Jello is a super low carb snack and you can come up with any flavor you want with the variety of mixes available.
The basic recipe is 2 cups of water, 1 single serving of sugar free drink mix and 1 tablespoon of unflavored gelatin.
- To make your own sugar free jello, just add 1 tablespoon of unflavored gelatin and 1 single serving of sugar free drink mixes to one cup of cold water.
- Whisk together and let it bloom for 3 minutes while you boil the rest of the water.
- Pour the boiling water over the gelatin mixture and whisk until the gelatin dissolves.
- Refrigerate for 2-4 hours until the gelatin is set.
How to make this easy red white & blue keto jello dessert.
This is an easy keto dessert recipe but it takes time for the jello to set. Aside from that it on takes a minute or two to make each layer.
- First make your blue layer of keto jello by add 1 cup of cold water and a blue drink mix to a glass measuring cup or a medium bowl and sprinkle in the gelatin powder. Mix it well and let it bloom while you boil water.
- Add 1 cup boiling water to the gelatin mixture. Whisk for a few minutes until the gelatin is dissolved then pour the liquid into your dessert cups. I use these glass dessert cups which worked well but you can try jars as well.
- Place them in the refrigerator for 2 hours or more until they set and are firm to the touch.
- Meanwhile about an hour before they are ready, make the red layer of jello just like you made the blue except us a red drink mix. You want it to cool down before you add it to the blue layer. Pour the red jello over the blue and refrigerate for another hour or so.
- When the red layer has set, make the cheesecake layer by beating the cream cheese and drink mix until creamy using an electric mixer. Then add in the heavy cream and continue to whip until the texture is nice and creamy.
- Pipe or spread the cream cheese mixture over the set jello and then decorate with strawberries and blueberries though they are just for decoration.

Are berries low carb or keto?
Yes berries are one of the lowest carb fruits you can eat. For 100g serving the net carb counts for various berries are:
- blackberries – 4.3g net carbs
- raspberries – 5.4g net carbs
- strawberries – 5.7g net carbs
- blueberries – 12.1g net carbs
- cherries – 14g net carbs
I specifically use strawberries and blueberries for their color but you could also use raspberries.
Above you can see my attempt at making a star for Memorial Day but it mostly looks like a flower. Below is my other design. I’m not much a food decorator so I’m sure you can do a better job than me. LOL!
