This Chicken Chickpea Chili is a super easy and tasty dish that only takes minutes to make. The combination of homemade salsa verde, chicken and chickpeas make for a hearty, delicious meal.
My stepdaughter recently sent me a recipe for Chickpea Chili that looked delicious and would make good use of our tomatillo supply. She said our 19 month grandbaby loves it. What a sophisticated palate that baby girl has! I always new she was special. As I was perusing the recipe I realized it was basically my salsa verde recipe with chicken and chickpeas added. So if you have a ton of tomatillos from your garden and don’t know what to do with them, try this delicious and easy recipe.
First make the salsa verde which in itself is an easy dish. You can just heat all the items in a pan and cook till the tomatillos are soft. Then puree in the blender or food processor and voila! You have a delicious homemade salsa verde!
Next take the salsa verde and put it back in the pan with a can of chickpeas. Heat for about 10-15 minutes and then add the roasted chicken till it is heated through. Add some chopped cilantro, avocados or raw onions as a garnish. Delicious!
Please note that this is pretty spicy. If you want it less spicy just use less jalapeños in your salsa verde.
Recipe: Chicken Chickpea Chili (using Salsa Verde)
Ingredients
- 2 cups salsa verde from my previous recipe
- 2 cups canned chickpeas
- 1 cup chopped cooked chicken
- cilantro to garnish
Instructions

Add salsa verde and chickpeas to a pan.

Heat for about 10 minutes.

Add chopped chicken until it's heated through. About 5 minutes.

Serve with cilantro as a garnish. Can also use avocados, chopped onions or sour cream.

Please note my recipe for Salsa Verde is pretty spicy so omit 1 jalapeño if you wish it to be less spicy.
