This peach caprese salad is a fun twist on the summer classic tomato caprese salad and perfect with fresh summer peaches. With just a few simple and fresh ingredients you can create a flavorful summer side dish in minutes. The sweet peaches goes so well with the creamy fresh mozzarella, tangy balsamic, olive oil and fresh basil leaves.

One reason I love summer is all the fresh produce. Peaches are one of my favorite fruits and today I made this delicious peach caprese salad with fresh basil from our garden. It was a nice flavor change from traditional caprese salad which uses fresh tomatoes but we really loved it and I thought I’d share it with you today.
You can make this summer salad in minutes and eat it as a side dish or for a fresh and light lunch. All you need is fresh peaches, fresh basil, fresh mozzarella, good olive oil and balsamic vinegar.
Recipe ingredients and substitutions.
The simple ingredients I used today were peaches, extra virgin olive oil, balsamic vinegar, fresh mozzarella, fresh basil, salt and black pepper.
- Peaches – I made this last month so the ones I bought were just coming into season so I bet they are even better now. Regardless you need to use a ripe peach and not canned. You could also use nectarines and of course you could use fresh tomatoes.
- Fresh Mozzarella Cheese – I love the thin sliced mozzarella that you can get at most grocery stores in the summer. I know Aldi’s sells it often. You can even use mozzarella pearls which are those little bite sized round shaped mozzarella balls. It doesn’t matter about the shape but it has to be fresh.
- Fresh Basil – This fresh herb is a most for a caprese salad. You can not use dried basil as it just won’t taste the same. Luckily it is very common in most grocery stores or if you have an herb garden it should be going strong right now.
- Extra Virgin Olive Oil – You can use a light olive oil but I love the flavor of a strong and rich extra virgin olive oil. I buy mine at Aldi’s most of the time as it’s convenient.
- Balsamic Vinegar – I ended up making a sort of balsamic glaze by cooking down regular vinegar. However if you have balsamic glaze on hand you can use that as well. And if you really want to try something different try a drizzle of honey!
I just wanted this to be a quick salad but if you wanted add a protein you can try some very thin slices of prosciutto or other Italian meats like pancetta. Sometimes Aldi has a nice selection and I know they have prosciutto as my husband buys it often.
How to make a peach caprese salad.
Step 1: To make the balsamic glaze, add the vinegar to a small sauce pan and simmer over medium heat. You want to cook this for around 5 minutes until it thickens.
Step 2: When it reduces and thickens, take it off the heat and set a side. Is should look like the picture below.
Step 3: Dice the mozzarella slices and slice the peaches. I keep the skin on because it makes it easier to cut. If you want to take them off you can. Add them to a bowl or serving platter.
Step 4: Drizzle the extra virgin olive oil over the sliced peaches and cheese and then season with salt and fresh black pepper. Then take a spoon and drizzle the balsamic reduction over top. Finally garnish with minced fresh basil.

This makes a nice lunch if you serve it with crusty bread and you can dip it in the leftover oil and vinegar dressing with the fresh basil.

Peach Caprese Salad Recipe
This easy and tasty peach caprese salad is a delicious change of pace from using fresh tomatoes and also uses lots of fresh summer ingredients.
Ingredients
- 5 ounces fresh mozzarella
- 3 fresh peaches, sliced
- 2 tablespoons extra virgin olive oil
- 4 tablespoons balsamic vinegar
- 6-8 fresh basil leaves, minced
- salt and black pepper to season
Instructions
- Get out a small sauce pan and add the balsamic vinegar. Turn the heat to medium heat and reduce the vinegar to half. This should only take up to 5 minutes so keep an eye on it. When it starts to thicken and condense, take off the heat and let cool.
- Next slice or dice the peaches and cut the mozzarella into bite sice pieces. Place in a serving bowl. Then drizzle the extra virgin olive oil over top. Season with salt and fresh ground black pepper.
- Once the vinegar has cooled, drizzle over the salad and the top with the minced fresh basil leaves.
- Refrigerate until ready to eat. Store leftovers in an airtight container.
