Every once in awhile I want to cook more fish dinners for my family. So when I my hubby brought me some beautiful grape tomatoes from his garden I decided to make this low carb Mediterranean cod skillet dinner.
I wanted to create a rich and savory tomato sauce using Mediterranean ingredients like garlic, tomatoes, olives, etc. It was a great way to have a keto fish dinner and all in one skillet! Best of all it only had 5g net carbs and took 30 minutes.
Ingredients I Used
I used frozen cod filets I found at Costco. However you could use another mild white fish like tilapia if you want. I think I will try that next time as I like tilapia. 😉
To make the savory tomato sauce for the fish, I used my hubby’s grape tomatoes, Kalamata olive, green olives, garlic, anchovy paste, garlic, tomato paste and parmesan cheese.
Let’s Make Some Mediterranean Cod!
This recipe is very similar to my low carb chicken puttanesca recipe. So if you like this dish, check out that one. Here is how you make this keto fish dinner:
- Sprinkle salt and pepper over the cod filets then brown both sides in a large skillet.
- Take out the fish and set aside. Then add the broth, tomato paste and anchovy paste. Whisk to combine and then add the garlic, tomatoes and olives. Simmer for about 5 minutes.
- Add the cod back into the sauce, cover and simmer for about 5 minutes until the fish is cooked through.
- Sprinkle parmesan cheese over top and serve.
Recipe Tips & Notes
- You can substitute any mild white fish for the cod. Times may differ if you are using a thinner fish like tilapia. It should take less time.
- I used both Kalamata and large green Greek olives. You can use whatever kinds of olives you like but make sure they are pitted.
- I used anchovy paste because I had it but honestly I would not run out to get it if you don’t. You can substitute a tablespoon of worcestershire sauce or just leave it out.
- Serve this keto fish dinner with cauliflower rice or zucchini noodles or just eat it as is with a low carb side dish like this lemon parmesan asparagus.

Easy Low Carb Mediterranean Cod
Looking for a zesty low carb fish dinner? Look no further because this low carb Mediterranean cod skillet dinner is full of flavor and a cinch to make for any weeknight meal. Each serving is only 5g net carbs.
Ingredients
- 1 lb cod (or other mild white fish)
- 1 tablespoon olive oil
- 2 cloves garlic, crushed
- 4 tablespoons tomato paste
- 1 teaspoon anchovy paste
- 1 cup grape tomatoes, sliced in half
- 20 olives sliced in half (I used Kalamata and green)
- 1 cup chicken broth (or vegetable)
- 1 tablespoon of parmesan cheese
Instructions
- In a large saute pan, heat up the olive oil to medium high. Sprinkle salt and pepper over the cod filets then brown them in the skillet on both sides. About a minute or two just to give them color.
- Take out the cod and set aside. Turn the heat down to medium and add in the broth, tomato paste and anchovy paste. Whisk to combine and then add the garlic, tomatoes and olives.
- Simmer for 5 minutes, then add in the cod, cover and cook for 5 minutes or until the cod is cooked.
- Serve as is, or over cauliflower rice or zucchini noodles.
