Just mix and then pour into molds and you will have these sugar free keto pops in a few hours. Each popsicle has only 40 calories and 1.5g net carbs!

I’ve been on popsicle kick lately. I tend to do this every summer because it’s hot out and I love a sweet treat on a low carb diet.
While I’ve never had a pina colada drink, I found out that it’s just pineapple juice and coconut products both of which I love. So I came up with these keto pina colada popsicles. I might have to try the drink now!
Today I’m showing you two ways to make these pops using different ingredients. One has more pineapple flavor and only 1.5g net carbs and the other has a creamier coconut flavor with 2.9g net carbs. I’ll show you how I make both because they were both very tasty!
Note most coconut products are low carb by nature as long as they are unsweetened. However pineapple juice which is typically used in pina coladas has a lot of sugar and therefor carbs. That is why I used other pineapple flavored products.
Ingredients For Popsicle Recipe 1.
This is the recipe that has more coconut flavor and is a bit more creamy. However it does have a little higher carb count and calories. The ingredients I used were: coconut cream, Torani sugar free pineapple syrup, unsweetened almond milk and xanthan gum.
The xanthan gum is a very good low carb thickener. It’s definitely helpful in getting a good texture and consistency. It’s mainly used in low carb baking and gravies but it helps here too.
Ingredients For Popsicle Recipe 2.
This recipe has more of a pineapple flavor and is less in carbs and calories. I used sugar free pineapple drink mix, coconut milk and xanthan gum for these pops. You might get a little more coconut flavor if you use the cream of coconut instead of the milk. You just have to play around I think.
I liked both pops. My hubby preferred the more pineapple one and my father in law liked the coconut one.
Let’s Make Those Keto Pina Colada Popsicles!
- To make either one of these popsicles, you just have to add the ingredients to a high speed blender.
- Note though that you should slowly pour the xanthan gum in while the blender is going if you can. You don’t want it to clump. Also clean your blender right after because the xanthan gum is a little bit gooey.
- Then just pour the mixture into popsicle molds. I have all kinds of popsicle molds that I’ve collected through the years. I talk about my favorite popsicle molds in this post. But really you could use Dixie cups and popsicle sticks if you wanted. Please scroll down to print the recipe card with both recipes on it.
Recipe Tips And Notes
- Either recipe you make will result in a thick mixture which is good for putting the popsicle sticks in. They will stay put.
- You can play around with any and all of the ingredients for both recipes. The pineapple drink mix is stronger in flavor than the Torani syrup and the coconut cream is stronger than the coconut milk.
- Check the brands you use for nutritional information as all brands are different. My calculations where used with the brands in the pictures above.
- You don’t have to use the xanthan gum if you don’t have it but it does thicken and give a good texture. If you are low carb dieter I think it would come in handy for other recipes and would be worth buying.
- Make sure to clean your blender right away because the xanthan gum has a jelly-like consistency.
- You can store the popsicles in cheap sandwich baggies and then put those in a big ziplock bag in the freezer.
What Difference Between The Two Recipes
Recipe 1 that used the Torani sugar free syrup has more of a coconut taste, is creamier, makes 5 pops but has:
149 cals / 14.6g fat / 3g carbs / 0.1g fiber /1.8g protein = 2.9g net carbs
Recipe 2 which uses sugar free pineapple drink mix has more pineapple taste, makes 6 pops and has:
40 cals / 4.2g fat / 1.5g carbs / 0.1g protein = 1.5g net carbs
If You Want To Make Boozy Pops
I did not add any alcohol to these keto popsicles but you could. Alcohol does affect the texture but it can be done. I suggest you check out my low carb boozy pops post for ideas.

These easy low carb pina colada pops are a refreshing and easy keto snack with the flavors of pineapple and coconut.
Ingredients
- FOR RECIPE 1 - More Coconut Flavor
- ½ cup Torani sugar free pineapple syrup
- 1 cup coconut cream
- ½ cup almond milk
- 1 teaspoon xanthan gum
- FOR RECIPE 2 - More Pineapple Flavor
- 1 â…” cup unsweetened coconut milkÂ
- 1 single serving sugar free pineapple drink mix
- 1 teaspoon xanthan gum
Instructions
- For Recipe 1 - Add the Torani syrup, coconut cream and almond milk to a high speed blender and mix. Then slowly pour in the xanthan gum while the blender is on low. Turn to high for a second or two and then pour into molds. Add popsicle sticks and freeze for 2 hours or until hardened.
- For Recipe 2 - Add the pineapple drink mix stick powder and coconut milk to a high speed blender and mix. Then slowly pour in the xanthan gum while the blender is on low. Turn to high for a second or two and then pour into molds. Add popsicle sticks and freeze for 2 hours or until hardened.
