My family is big on everything bagels. All those spices and seeds add big flavor to a bagel so today I thought why not crackers? These low carb everything crackers are SUPER easy to make and taste great!
The “everything” consists of sesame seeds, sea salt, minced garlic, minced onion and poppy seeds. I have a bottle of this seasoning I got from Trader Joe’s but this spice mix is easy enough to make. These crackers are gluten free and grain free as well as low carb and each cracker has only 0.8g net carbs.
Gluten Free Crackers
I have a few gluten free cracker recipes on this blog. One of my most popular recipes is cashew crackers which uses of course cashew flour. Another recipe uses flax seed and almond flour. The gist of most gluten free cracker recipes is that they use a nut flour and egg whites as a base and season it with herbs and spices.
In this recipe I just made a dough out of almond flour and egg whites. I didn’t season the dough until the end. However you can use the base of this recipe and make all kinds of crackers. I would like to make a rosemary and Parmesan cheese cracker next.
Low Carb Cracker Recipe
You begin by making a dough with almond flour and egg whites. Roll it really thin onto a silicone mat or parchment paper if you want. This can be a little tricky because it’s sticky dough. What you have to do is spray a piece of wax paper, lay it on top of the dough and with a rolling pin, roll it nice and thin. The thinner the dough the crispier the cracker.
For this recipe I put the seasoning on top like you would a bagel. Other recipes I tend to mix the seasoning in the dough. Then you score it with a knife to make your crackers. Make sure not to cut through though.
Bake the crackers for about 12 minutes and take it out of the oven. Break off the browned crackers around the edges and put the tray back into the oven for a few more minutes. Take it back out and break off the browned crackers. Repeat this until the are all brown and done.

Make Your Own EVERYTHING Spice
Above you can see the seasoning I bought from Trader Joe’s. I didn’t use it in the recipe, I made my own. I just mixed equal parts sea salt, dried minced onion, dried minced garlic, sesame seeds and poppy seeds. Next time I’ll try the bottled spice blend so I can compare.
I did these in a rush today and as you can see some of the crackers are a bit thick. Those are the ones in the middle of the cookie sheet. I personally prefer the thinner crispier ones on the ends.
And that is all there is to this recipe. So remember the base of a simple gluten free, low carb cracker is just nut flour and egg whites. Then you can add any seasonings you want. The nutrition for 1 cracker is:
25 cals / 1.6g fat / 1.2g carbs / 0.4g fiber / 1.1g protein = 0.8g net carbs

Low Carb Everything Crackers

Ingredients
- ¾ cup almond flour
- 1 egg white
- 2 teaspoons sesame seeds
- 2 teaspoons sea salt
- 2 teaspoons dried minced garlic
- 2 teaspoons dried minced onion
- 2 teaspoons poppy seeds
Instructions

Preheat oven to 325 degrees F.

In a small bowl, mix the sesame seeds, salt, poppy seeds, garlic and onion.

In another bowl mix the almond flour and the egg white to form a dough.

Place a Silpat or a piece of parchment paper on a cookie sheet. Spray some cooking spray on a piece of wax paper. Place the dough between the Silpat and the wax paper and roll very thin.

Lightly score the crackers with a pizza cutter or knife but do not cut through the dough. Sprinkle spices over all the dough and lightly press down into the dough.

Bake for 12 minutes. Take out and break off the cooked brown crackers around the edges. Place back in the oven for a few more minutes then break off the browned crackers. Do this a few times until all the crackers are done. You do this so you don't burn any crackers.

Store in an airtight container.

Hi Joshua, in the crisp bread recipe the added seeds are similar to the flour so it’s really quite comparable but I have two other cracker recipes that use this ratio….

That being said, you can add a little water to your dough or use another egg white. I use extra large eggs so perhaps that is the issue. Also the use of a fine almond flour might make it less crumbly. It’s really just a basic dough with the seasoning giving it all the taste so just add a little more egg white or water to make the dough the consistency you think it should be and you will be fine.
