This recipe goes in the “awesome taste, not so awesome photography” file. I made this today and I’m telling you it is one of my best recipes! It has so much flavor I can’t wait until my husband and son come home so they can try it. However I have so much going on for the holidays that my photos didn’t come out all that great. So you will just have to take my word that this creamy sun dried tomato chicken soup is out of this world. And it’s low carb, yay!
Using Cauliflower Cream To Soups
I like to use cauliflower puree to thicken soup and to take the place of some of the cream. Today because I have so many elements in this soup I didn’t want to use too much so it acted more as a replacement for some of the cream rather than as a thickener. You could skip the cauliflower but it’s added nutrition so I would keep it in.
Creamy Sun Dried Tomato Chicken Soup Recipe
Firs thing you want to do is make the cauliflower puree. Add 4 cups of chicken broth and whisk in a tablespoon of Better than Bouillon in a soup pan. Then add in the cauliflower, cover and cook until tender. This should take about 8 minutes. Use a fork to see if it is tender.
Spoon out the cauliflower to a blender, along with the parmesan cheese. Add a half cup of the stock and blend on high until nice and creamy.
Add the chopped sun dried tomatoes, garlic and chicken to the chicken broth. Mix well and then add in the cauliflower cream. Let this cook for a few minutes and then add in the spinach and cream. Let that cook for a minute more and you are done.
Start to finish this recipe shouldn’t take more than 15 -20 minutes. It is so good! I hope you like it as much as I do and I’ll let you know what my family thinks about it tonight. The nutritional information for 1 serving is:

Ingredients
- 3 cups cauliflower
- 32 oz chicken broth
- 1 tablespoon bouillon
- 1 clove garlic, crushed
- 1 cup spinach, fresh baby
- ¼ cup sun dried tomatoes, chopped
- ¼ cup Parmesan cheese
- ½ cup heavy whipping cream
- 8 oz chicken breast, cooked and chopped
Instructions
Make the cauliflower puree.

Next add the cauliflower, cover with a lid and cook until fork tender. This should take about 8 minutes.

Spoon the cauliflower into a blender but keep the cooking liquid. Add the Parmesan cheese, ½ cup of the cooking liquid and blend until nice and creamy.
To make the soup.

Add the sun dried tomatoes, garlic and cooked chicken to the chicken broth mixture. Mix it well and then pour in the cauliflower cream from the blender.

Let this cook for a few minutes and then add in the spinach and cream. Let that cook for a minute or two more and you are ready to serve.

I made this soup this weekend. I tweaked it a bit. I weighed the cauliflower (975 grams for 3 cups) and added some chopped onion to the broth and cooked it with the cauliflower. I also added 1/2 teaspoon of salt and 1/4 teaspoon of pepper. I also drained the sun dried tomatoes. It turned out so good! I will definitely make it again.

what is a good substitute for the cauliflower in this recipe? Love this recipe minus the cauliflower.

Hi Felicia,
I would just eliminate the cauliflower but add everything else. If you want it a bit more creamy, add a little cream cheese. It will be thinner but it should still taste good.

this was SO good, I’m so happy I stumbled upon it! I added extra tomatoes as well cus im a tomato freak, but it’s so creamy and comforting, a great dish for cold days. Other than the tomatoes, I followed the recipe exactly and it turned out great. Seems like you could easily modify this as well!

This came out super tasty!! I did add some pepper and Mrs. Dash as well but even before that it was still really good. Love the cauliflower puree. I think next time I may do a little extra cauliflower and add some chopped asparagus.

I meal prepped this last night for this weeks lunches! It is delish! I personally would like a bit more sun dried tomato flavor, but it was delicious the way it was! I also added some sun dried tomato Mrs. Dash to it and Himalayan salt and pepper for some added flavor. Great idea for the cauliflower! Great for fall/winter/rainy days! Good job! Also, the low calorie count is a huge bonus!!

Absolutely loved the soup. I made it in the Instant Pot Ace adding the spinach, chicken and cheese in the last 5 minutes. A real winner for me. Tried to give it 5 stars but the program wouldn’t take it
