I have a Vitamix blender and it makes it easy to create thick and creamy soups like this keto broccoli and cheese soup recipe. Using only 4 ingredients I made this delicious and healthy broccoli soup in just 10 minutes.
This is a basic but delicious low carb recipe and is perfect for a quick lunch on a low carb diet. But you can make a couple batches in the same amount of time and use it in your low carb meal prep and planning. Freeze a few portions for another day.
And while I used my Vitamix blender you can use any kind of blender or even a food processor or immersion blender. Though I love my Vitamix the best because it’s really powerful and blends it perfectly.
Homemade soup is my comfort food and this is the perfect lunch for me in the cooler weather. I love the taste, it’s easy and one bowl of this low carb broccoli cheese soup recipe only has 4.3 grams net carbs and 9.4 grams of protein so you can’t beat that!
Recipe ingredients and substitutions.
Below you can see the 4 simple ingredients that I used for this soup. I was originally going to add a bit of olive oil but it didn’t need it. So I ended up using a good sharp white cheddar cheese, fresh broccoli, onion powder and garlic powder.
Fresh Broccoli
I used fresh broccoli and steamed it in the microwave before pureeing it. You could use frozen broccoli florets to just precook it according to package instructions. You could also use leftovers from another meal if you have it. That being said you could also add other veggies but more about that below.
Sharp Cheddar Cheese
I think it’s important to use a good cheddar in this recipe. If you want to use a more bland cheddar you might want to add a bit of grated parmesan too for more flavor. It won’t affect the amount of carbs most likely. And while I used a white cheddar, you can use orange cheddar as well. I also like to grate my own but pre-shredded cheese is good too.
Other flavorful cheese probably work too like feta, blue cheese, asiago, parmesan, goat cheese ect. I have not tried these yet but I think they would work.
Spices
I just used onion powder and garlic powder to add more flavor. You could also add salt and black pepper or even some hot pepper flakes for a bit of heat. But I was trying to keep this as simple as possible.
And note that while I used just water as the base of this recipe you could use chicken broth or vegetable broth if you wanted to keep it vegetarian. I was just trying to keep it as simple as possible. This is a basic recipe that you can easily make your own.
How to make keto broccoli and cheese soup.
Note I used a Vitamix blender which is great for recipes like this. If you don’t have a high speed blender you can use a food processor or immersion blender. It will still work but it may not have the same texture and consistency.
Step 1: First thing you want to do is precook your broccoli florets. Just cut it up into bite size pieces and microwave for 4-5 minutes. I like to use a microwave steamer for things like this. Once the broccoli is fork tender it’s done.
Make sure to drain any excess water, especially if you are use frozen.
Step 2: Next you add the broccoli, shredded cheddar cheese, garlic powder, water and onion powder to a high speed blender and blend for a minute or until it’s all pureed. Again you can use chicken broth or vegetable broth in place of the water.
Step 3: When it’s done it should look like the pic below. Taste test and if it need a bit of salt or black pepper add it now and blend for just a second or too. You could also add more shredded cheese if you want a more cheesy soup. Pour into bowls and enjoy.
Store leftover keto broccoli cheese soup in an airtight container or place in a freezer safe container for a quick low carb meal another day. Please scroll down to view the printable recipe card.

Low carb garnishes or variations to try.
Below are a few low carb garnishes or toppings you can try to dress up this amazing soup. They shouldn’t affect the carb counts much if at all.
- extra cheese
- bacon pieces
- sour cream
- fresh minced herbs like fresh basil, fresh parsley, or cilantro.
- roasted pepita seeds
To play around with the flavors try some of these ideas and low carb options.
- add even more steamed veggies like cauliflower florets, carrots, spinach, etc. for variety and to make the soup thicker
- to make this delicious recipe have a more creamy texture add a few tablespoons of heavy cream, cream cheese or even a tablespoon of butter or olive oil
- try different cheeses for a different flavor like Swiss, gruyere, Jarlsberg, etc. (note don’t use bland cheeses like American)
- use different seasonings or spice blends for extra flavor like a Mexican taco blend or green goddess or even everything bagel spice

Keto Broccoli and Cheese Soup Recipe
This keto broccoli and cheese soup is made in the blender so it only takes 10 minutes to make and uses only 4 ingredients. This low carb high protein lunch is perfect for meal planning too. You can easy double or triple this batch and freeze for another day.
Ingredients
- 2 cups broccoli, chopped
- 1 cup of water
- ยฝ teaspoon onion powder
- ยฝ teaspoon garlic powder
- 2 oz sharp cheddar cheese
- ยผ teaspoon salt and black pepper, each (optional)
Instructions
- Add the chopped broccoli to a microwave safe bowl along with a tablespoon or two of water. Cover and cook for 4-5 minutes until fork tender.
- When done, drain excess water and add to a high speed blender along with the water (can also use chicken broth). cheese and spices.
- Blend on high for 30 seconds or until nice and smooth. Taste test and if you want you can also add salt and black pepper if you feel it needs it. The cheese can sometimes have enough salt for my tastes.
- Note you can also make this with an immersion blender or food processor but a blender will puree it better.
- Serve and eat immediately. Store leftovers in an airtight container or freezer safe container for another meal.
Notes
RECIPE TIPS & NOTES
- I used fresh broccoli and precooked it in the microwave but you could also use frozen. Make sure it is thawed and cooked before blending.
- This is a great recipe if you have leftover broccoli. Just heat it up for a minute in the microwave and make as directed.
- You add other vegetables if you wanted, like cauliflower, spinach, carrots, etc. They would be need to be precooked as well.
- I used a Vitamix blender which is great for recipes like this. If you donโt have a high speed blender you can try a food processor. It will still work but may not have the same consistency.
- To make it decadent and have a more creamy texture add a few tablespoons of heavy cream, cream cheese or even a tablespoon of butter or olive oil
- You can top this soup with more cheese, bacon bits, fresh herbs, toasted seeds or sour cream. Change up the seasonings if you want or add a little heat with crushed peppers or cayenne pepper.
