I have a Vitamix blender and it makes it easy to create thick and creamy soups like this keto broccoli cheese blender soup. Using a good sharp cheddar cheese gave this low carb soup lots of flavor and it only took 10 minutes. Plus it only has 4.3g net carbs so you can’t beat that!
The 4 Ingredients I Used
Below you can see the ingredients that I used for this soup. I was originally going to add a bit of olive oil but it didn’t need it so I ended up using a good sharp white cheddar cheese, fresh broccoli, onion powder and garlic powder.
It’s important to use a good cheddar in this recipe. If you are using a more bland cheddar you might want to add a bit of parmesan too for more flavor.
Let’s Make Some Broccoli Cheese Blender Soup!
First thing you want to do is precook your broccoli. Just cut it up into pieces and microwave for 4-5 minutes. I like to use a microwave steamer for things like this.
Next you add the broccoli and the rest of the ingredients to a high speed blender and whiz for a minute until it’s all pureed. It should look like the pic below.
Some Low Carb Soup Additions
Now you just have to pour your soup into a bowl and eat it. You could also top it with:
- more cheddar cheese
- sour cream
- fresh minced herbs
- roasted pepita seeds
- more chopped, steamed broccoli for bulk
- play around with the seasonings. like a sprinkle of cayenne or crushed red peppers
Recipe Tips & Notes
- I used fresh broccoli and precooked it in the microwave for 4-5 minutes. You could also use frozen but you have to make sure it is thawed and cooked before blending. Make sure to get rid of as much liquid as you can if you are using frozen.
- This is a great recipe if you have leftover broccoli. Just heat it up for a minute in the microwave and make the soup recipe as directed.
- This would also work with cauliflower.
- I used a Vitamix blender which is great for recipes like this. If you don’t have a high speed blender you can try a food processor or hand blender. It will still work but may not have the same consistency.
- You can top this soup with more cheese or sour cream. Change up the seasoning if you want by adding a little heat with crushed peppers or cayenne pepper.

This keto broccoli cheese blender soup requires 4 ingredients and less than 10 minutes to make!
Ingredients
- 2 cups broccoli, chopped
- 1 cup of water
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- 2 oz sharp cheddar cheese
- ¼ teaspoon salt
Instructions
- Add the chopped broccoli to a microwave safe bowl and cook for 4-5 minutes until fork tender.
- When done, add to a high speed blender along with the other ingredients and whiz until nice and smooth.
- Eat immediately.
