I’ve been playing around with these chocolate keto almond butter cookies all week because they are really easy to make and yummy. After recently updating my keto almond butter cookies it got me thinking.
What other tasty ingredients could I include? So I made them with a chocolate base and added white chocolate chips, pecans, coconut and caramel flavoring. This keto cookie has it all!
Low Carb Ingredients I Used
Below you can see most of the ingredients I used to make these cookies which were: Swerve brown sugar sweetener, unsweetened almond butter, Divine cocoa powder, ChocZero white chocolate chips, unsweetened coconut flakes, pecans, an egg and Torani sugar free salted caramel syrup.

Let’s Make Some Keto
Almond Butter Cookies!
STEP 1: First thing that you want to do is toast the pecans and coconut in a dry skillet. Just brown them a little so that they get crispy and crunchy. Also sprinkle a little salt on top as that will work well with the sweetness of the cookie.
STEP 2: Next you want to mix everything together in a big bowl. You can see that this is a very sticky and gooey cookie batter.
STEP 3: Now cover a cookie sheet with parchment paper or silicone mat. I used a tablespoon to scoop out my cookies to keep them all even in size.
Note that these cookies will not spread or rise much at all. I purposefully wanted them to be a mound to give them a bit of a brownie texture. My husband liked them better this way.
I have also made them flatter and thought they looked better but everyone seemed to like the mound shape better as far as texture went. You can see the flat ones below.
They were a little drier but still chewy.
STEP 4: Now you bake them in a 375°F oven for 8 minutes. You don’t want to overcook them but you will know when they are done when you touch them and they are firm on top.

- These almond butter cookies will not spread or rise. They are very dense but also very tasty!
- I used Divine cocoa, ChocZero chocolate chips and Torani sugar free salted caramel syrup because they are very low in carbs. You can substitute other products if you wish but that might change the carb counts.
- The basic cookie is the almond butter, Swerve brown sugar and egg. From there. you can add what you want. Check out this almond butter cookie post for the basic recipe.
- You can change up what you want to put in these cookies such as different nuts like macadamias, walnuts or almonds. You can use chocolate chips instead of white or maybe change the type of Torani sugar free syrups you use.

These cookies are low carb, sugar free, gluten free and flour free! Each cookie has only 2g net carbs!
Ingredients
- ¼ cup pecans, choppped
- ¼ cup unsweetened coconut chips
- ¼ teaspoon salt
- 1 egg, beaten
- 2 tablespoons of Divine cocoa powder
- ¼ cup Swerve brown sugar sweetener
- ½ cup unsweetened almond butter
- 1 tablespoon Torani sugar free salted caramel syrup
- 60 ChocoZero white chocolate chips (14g)
Instructions
- Preheat oven to 375°F. Also cover a cookie sheet with parchment paper or silicone mat.
- In a small nonstick skillet, add the pecans and coconut. Sprinkle a little salt on top and toast for a few minutes until the coconut starts to brown. Take off the stove and set aside to cool.
- In a mixing bowl add the egg, Swerve brown sugar, cocoa powder, almond butter and Torani syrup. Mix it well and then add in the white chcoolate chips and cooled pecan mixture.
- Using a tablespoon, add the sticky batter to the cookie sheet. Note these cookies will not spread or rise so you don't have to space them too much.
- Bake for 8 minutes. You don't want to overcook them but you can tell they are done when you touch the tops and they are hard not sticky.
- Let them cool before eating.
