They are low carb, high protein and gluten free and you can eat them as a snack or breakfast. You only need a few simple ingredients and each as 1.1 grams of net carbs and 2.6 grams of protein!

I’m still enamored with cottage cheese and having been playing around with it a lot lately. I love that it’s easy to get, high protein and honestly I love the taste of it. So today I present my newest creation – mini cottage cheese blueberry muffins.
I originally made them in the air fryer and they ended up looking a bit like muffin tops. So then I made them in a muffin tin and the end result is what I am sharing with you today.
I added a bit of lemon zest because I love that flavor combination. And now I have a delicious and easy low carb, high protein breakfast muffin or a grab and go snack!

Recipe ingredients I used and substitutions.
The simple muffin ingredients I used were cottage cheese, almond flour, brown sugar sweetener, small frozen blueberries, baking powder and an egg. I also added some lemon zest but that is optional.
- small frozen blueberries – My sister turned me on to this small wild blueberries from Trader Joes. The reason I like them as they are small and these are mini muffins. You can use any kind you want be it frozen, fresh, large or small. But you get more bang for your buck with the small ones.
- almond flour – You can buy almond flour anywhere these days. I get mine at Aldi but I think most stores carry it.
- Swerve brown sugar sweetener – This is my favorite sweetener but you can use any brand you want. I prefer a brown sugar sweetener taste and Lakanto Golden is another one to try but you can also use regular sweetener if that is what you have on hand. If you don’t care about carbs you can try coconut sugar or regular brown sugar.
- cottage cheese – I love Good Culture brand of cottage cheese because it’s low in carbs, tastes great and has live cultures in it. But you can use any brand you want.
- lemon zest – I added this because I love blueberry lemon flavor combination but this is optional. You could also use lemon extract or even vanilla extract for a little boost of extra flavor but I prefer the zest. Orange zest would be nice too.

How to make cottage cheese blueberry muffins.
Note I bought these mini muffin pans at Aldi one day and I love that they are so small. I also a wonderful silicone muffin tray that I use a lot.
Step 1: Preheat the oven to 350°F. Spray a mini muffin tin with nonstick cooking spray and set aside.
Step 2: Place the cottage cheese in a food processor or use a blended and blend until creamy. Then add the almond flour, egg, brown sugar sweetener, lemon zest if using and baking powder and blend until well combined.

Step 3: Spoon the batter into a mixing bowl and then gently fold in blueberries. Below is what it should look like.

Step 4: Take a cookie scoop or tablespoon measuring spoon and scoop some batter into the prepared mini muffin tin. Place on the baking rack in the preheated oven and bake for 20 minutes or until a toothpick comes out clean from the center.

Step 5: Let cool completely before taking out of the pan. They will set up more as the cool.

And that’s all there is to it. Spread a bit of butter or eat as is once they have cooled. Place leftover muffins in an airtight container and store in the refrigerator. Please scroll down to view the printable recipe card.

To make these in the air fryer.
I also made these in the air fryer but they came out more like muffin tops or pancakes. Personally I preferred baking in the oven but these were not bad if you want to try them. Here is how you do that if you are interested.
- Create the muffin batter like above. Place a sheet of parchment paper in the air fryer and spray with nonstick cooking spray.
- Place a mound of the batter and space out because they spread a bit. Bake in the air fryer for about 10 minutes. When they start to brown flip them over and cook for 2 more minutes.
- Let cool completely before taking off the parchment paper.

I also think this batter would lend themselves to keto protein pancakes but I have not tried that yet. You could eat this with this keto maple syrup or low carb honey!

These easy and tasty mini cottage cheese blueberry muffins are low carb, high protein and gluten free. Eat them as a healthy snack or grab and go breakfast.
Ingredients
- 1 cup cottage cheese (I like Good Culture)
- ¾ cup almond flour
- 3 tablespoons Swerve brown sugar sweetener
- 1 teaspoon baking powder
- 1 egg, beaten
- ½ cup blueberries (I like Trader Joes frozen mini blueberries)
- zest of 1 lemon (optional)
Instructions
- Preheat the oven to 350°F then spray a mini muffin tin with nonstick cooking spray. Set aside to make the batter.
- Place the cottage cheese in a food processor or use a blender and blend until creamy. Then add the almond flour, egg, brown sugar sweetener, lemon zest if using and baking powder. Blend until well combined. If you want less lumps add the cottage cheese first and process.
- Spoon the batter into a mixing bowl and then gently fold in the blueberries.
- .Take a cookie scoop or spoon and scoop some batter into the prepared mini muffin tin. Place in the preheated oven and bake for 20 minutes or until a toothpick comes out clean from the center.
- Let cool completely before taking out of the pan. They will set up more as the cool. Place in an airtight container and store in the refrigerator.
