Recently I’ve been remaking a few easy and tasty low carb snacks and these keto pepperoni pizza bites were on the list. I forgot how much I love them! If you are miss pizza on a low carb or keto diet you should give this recipe a try.
It’s very simple in that you make these easy pepperoni cups and while they are cooking your roast some grape tomatoes on the stove with a few spices. When the cups are done, add in a few tomatoes and sprinkle some cheese and broil for a minute or two. The result is a crispy, flavorful pizza treat!
Recipe ingredients and substitutions.
The simple ingredients I used for this keto recipe is pepperoni slices, mozzarella cheese, grape tomatoes, olive oil, salt, black pepper and Italian seasoning. I did add some hot pepper flakes too because I love the spice and heat but that is optional.
- pepperoni – I used a larger size of pepperoni slices (3 ½ inches in diameter) that I bought at Aldi. I bought everything there by the way. You don’t want to use the smaller slices that come in a bag. You could possible put them in a mini muffin pan but I have not tried that. Also you could use salami as a substitute too.
- mozzarella cheese – I used shredded mozzarella because that’s what’s usually used on pizza but you could use cheddar cheese, provolone, parmesan or any cheese you want.
- grape tomatoes – The roasted tomatoes take place of marinara sauce or pizza sauce which might leak from the cups. I like grape tomatoes but you could use cherry tomatoes. However regular tomatoes chopped up would be too watery to use. So just use grape or cherry sized tomatoes.
- Italian seasoning – If you don’t have this you can substitute with half dried oregano and half dried basil spices.
Other things to add if you want are fresher crushed garlic when you are roasted the tomatoes or even fresh herbs like parsley or basil leaves. When they come out of the oven you can top with other pizza toppings like diced onions, bell peppers, mushrooms, black olives, etc.
And I did add some hot pepper flakes too because I love the spice and heat but that is optional.

How to make keto pepperoni pizza bites.
Step 1: Preheat oven to 375°F. Spray a muffin tin with nonstick cooking spray and set aside. Note that I used larger slices of pepperoni. The kind that you buy at the deli which are about 3 ½ inches in diameter.
Step 2: To make the pepperoni cups I cut a slit in the top and bottom of each piece of pepperoni. You want to use bigger lunchmeat size pieces not the small pieces of pepperoni that come in a bag. If each piece was a clock you would cut in at 12 o’clock and 6 o’clock.

Step 3: Place each piece in the muffin tin and use the slits to help you overlap the tops and to form a cup. Using half of the shredded cheese put a little bit in the bottom of each the pepperoni cups. This helps fill any holes you might have the meat, especially if it’s thinly sliced.

Place in the oven and cook for 8-10 minutes until crispy but not burnt. They will cook quicker if the meat is thinner rather than thicker.
Step 4: While those are baking make the roasted tomatoes. Get out a skillet and heat to medium heat. Add the olive oil and when it’s hot add the tomatoes and spices. Roast for 5-10 minutes until the tomatoes have browned and softened like those below.

Step 5: Take out the muffin tin from the oven and add 2 tomatoes to each up. Then use the rest of the cheese and top each one. Place back in the oven and hit the broil button. Broil for a few minutes until the cheese has melted and is to your desired level of browness.

And this what they look like out of the oven. You want to watch that they don’t burn. Mine are a little more brown than I wanted for pictures but I actually like them like this. Just check until they are the way you like them.

If you want to reheat leftovers, just pop them in the microwave for 30-60 minutes until heated through. You could probably try baking them in the air fryer or even oven if you want to make them be crispy again.

Pepperoni Pizza Bites Recipe (keto)
This keto pepperoni pizza bites recipe is an easy and tasty snack. They make for a quick low carb appetizer or finger food for a party too!
Ingredients
- 12 slices pepperoni (around 3 ½ inches diameter)
- 24 grape tomatoes
- ½ teaspoon Italian seasonings
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 2 teaspoons olive oil
- ⅓ cup shredded mozzarella cheese
Instructions

Preheat oven to 375°F. Spray a muffin tin with nonstick cooking spray and set aside.

To make the pepperoni cups, put a small slice at the top and bottom of each piece. This will help you place them in the muffin tin and make a cup. Where the slits are you can over lap them and it will fit good.

Use half of the cheese and add a little pinch of cheese on the bottom of each piece. This is good especially if your pepperoni is thin as there might be holes and as the cheese melts it will cover the holes .

Place in the oven and bake for 10 minutes or until browned and crisp. (Oven temps may vary so check around the 8 minutes mark. If it needs longer check it in 2 more minutes). You don't want to burn them but they should be crisp.

Meanwhile heat up a skillet to medium heat. Then add the olive oil and when it's hot, put in the tomatoes and spices. Sauté for about 10 minutes or until the tomatoes have softened and are slightly browned.

Take the pepperoni cups and then add 2 roasted tomatoes to each cup. Top with a pinch of the remaining cheese and set back in the oven. Set the oven to broil and just keep them in there until the cheese has melted and is browned to your liking. Let cool and serve.

Store leftovers in an airtight container. You can reheat them in the microwave in 30-60 seconds. Or try baking them in the oven or air fryer for a few minutes.

This is not a Palo snack. Paleo contains no dairy, also, it can’t be any pepperoni, must be nitriite and preservative free…… definitely not Hormel. Applegate has pork and turkey pepperoni .

Hi Shanna, you are right, the Paleo diet does not include dairy products and I do in many of my recipes. I tend to follow a modified Paleo / Primal /Low Carb diet and use the principles of all three. Dairy is a high protein food group with plenty of nutrition that I feel is valuable in our families’ diet not to mention that it tastes great. Here is an interesting article about full fat dairy products from Mark Sisson who started the whole Primal movement.
So for those who are strict Paleo enthusiasts, my apologies. Going forward I am trying to be more cautious with how I label my recipes but for some older posts such as this it is hard to change graphics that have been shared many times on Pinterest.

That’s a really great idea. Looks good too. What’s a good substitute for the pepperoni – it’s hard to get non-pork ones so I’m wondering if you can suggest an alternative that would give the same effect.
