There’s no question I love eggs. Funny enough my husband hates them. If only he loved them like me, we could have dishes like this low carb pepper and gruyere frittata for breakfast, lunch or dinner.
Frittatas are a dish that is so easy to make and you can put whatever you want in them. Today I wanted to use some of the colorful bell peppers I had in the fridge and grated gruyere cheese.
Since I was the only one eating this, I was able to freeze half for a quick low carb breakfast or lunch someday. However I think this would be the perfect spring dish for a brunch or special breakfast you might make on Mother’s Day or Easter.

One of my most popular low carb posts is a low carb breakfast pizza. It’s essentially a frittata like this with breakfast sausage, peppers and cheese toppings – just like a pizza.

I also have a pepperoni pizza frittata that is very popular and low carb too. That is the great thing about these frittatas: they can be used as a substitute for pizza crust. It doesn’t taste like bread but it sure tastes good and goes well with all the toppings.
How to make an easy pepper and gruyere frittata.
I love this type double handle deep skillet I have for making frittatas (see below). Frittatas start on the stove and end in the oven and this pan has the side handles for easy maneuvering and it’s also oven safe. An added bonus is that it looks nice on the table when serving.
- Preheat oven to 350° F and spray an oven safe pan with cooking spray.
- Beat eggs, cream, salt and pepper and then pour into pan. Do this in a high speed blender will work even better.
- Cook on the stove over medium heat until the sides start to set up, about 5 minutes.
- Place the pan in the oven and bake for 7-10 minutes then take out of the oven and layer peppers and cheese on top. (see below)
- Bake for another 10 minutes until the middle is cooked. Let cool before eating.

And that is all there is to it. Of course you can add other veggies or even some protein like ham, bacon or even sausage. If you want it to be a bit fancier with the proteins try prosciutto or pancetta.

Ingredients
- 1 cup sweet bell peppers, thinly sliced
- ½ cup heavy whipping cream
- ½ teaspoon salt
- ¼ teaspoon pepper
- 1 cup gruyere cheese, shredded
- 12 eggs
Instructions

Preheat oven to 350° F.

Spray a oven safe pan and heat up on stove.

Whisk eggs, cream, salt and pepper and then pour into oven safe pan. You can also blend this for a uniform mixture.

Cook over medium heat until the side start to set up, about 5 minutes

Bake in oven for 7-10 minutes until the top is firm.

Take out and sprinkle ⅔rds of the cheese. Then place the pepper slices on top. Lastly sprinkle remaining cheese.

Put back into oven and cook 7-10 minutes more. Make sure it is cooked in the middle. Let cool before cutting.

How many eggs and what size pan did you use.

Oh my goodness, how could I forget to put the eggs in the recipe! It’s fixed now and I used 12 eggs and the pan size was 11″ in diameter. Hope that helps!
