Pepper and Gruyere Frittata Recipe (low carb, protein)

Ingredients

  • 1 cup sweet bell peppers, thinly sliced
  • ½ cup heavy whipping cream
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 cup gruyere cheese, shredded
  • 12 eggs

Instructions

  1. Preheat oven to 350° F.

  2. Spray a oven safe pan and heat up on stove.

  3. Whisk eggs, cream, salt and pepper and then pour into oven safe pan. You can also blend this for a uniform mixture.

  4. Cook over medium heat until the side start to set up, about 5 minutes

  5. Bake in oven for 7-10 minutes until the top is firm.

  6. Take out and sprinkle ⅔rds of the cheese. Then place the pepper slices on top. Lastly sprinkle remaining cheese.

  7. Put back into oven and cook 7-10 minutes more. Make sure it is cooked in the middle. Let cool before cutting.
