A fresh and delicious strawberry salmon salad with the sweet kick of ginger dressing. Easy to make for a healthy lunch or dinner. I have been a strawberry fanatic these days. Maybe it’s because they are in season and there always seems to be a buy one get one free bargain at the grocery stores. I really enjoy using strawberries in my salads like my Strawberry Caprese Salad. They have such beautiful color and add a bit of sweet yet tart flavor that works well in this salad with the crunchy pecans and savory salmon. The salad dressing is very simple and it’s a light vinaigrette with honey and ginger. The ginger goes great with the strawberries and salmon to make this delicious strawberry salmon salad.
This salad will literally take only 5 minutes to make. I like to dress the salad first and then top with the cooked salmon. We had salmon for dinner the night before and I made extra so I could eat it for lunch the next day. I’m always thinking ahead…when it comes to food at least. 😉 I personally like this combination but you could substitute different nuts like almonds, walnuts or even use seeds (pumpkin, sunflower, etc.). Also you can add a bit of blue cheese or goat cheese to make it a little fancier if you like.
Strawberry Salmon Salad & Ginger Dressing
So there is not much to this recipe but I thought you might like the flavor combination and I especially liked the ginger dressing. This could easily be a meal in itself or as a side dish Well I hope you enjoy this healthy, flavorful salad! The nutrition for one serving (assuming a 4oz. piece of salmon) is as follows. This also assumes that you are using 1/2 of the dressing for each serving and in reality I think you would use less. So use these stats as a guideline. 803 cals / 78.7g fat / 13.2g carbs / 4.2g fiber / 18.6g protein = 9g net carbs.
- 2 cups of greens (kale, spinach, etc)
- ¼ red onion, thinly sliced
- 4 strawberries thinly sliced
- ½ cup of whole pecans
- 2 salmon filet, cooked
- 2 teaspoons honey
- 1 teaspoon fresh grated ginger
- ¼ teaspoon salt
- ½ teaspoon pepper
- ¼ cup white balsamic vinegar
- ½ cup olive oil
- To make the dressing, add your vinegar, olive oil, honey, ginger, salt and pepper to a bowl and whisk until blended.
- In a large bowl add your greens, onions, strawberries and pecans and then add the dressing. Start with half of the dressing and add more as your like.
- Plate the salad and place a cooked salmon filet on top.
