We drink alot of coconut and almond milk in our house. My son doesn’t seem to mind the taste when using it in his cereal or when I make smoothies so that is why we buy in our house. However sometimes I run out and have always wanted to make my own and today was the day.
It couldn’t be easier. Using a 2 part water to 1 part coconut ratio and a Vitamix, you can have coconute milk on hand in just minutes.
First heat 2 cups of water to almost but not quite a boil. Â Then put 1 cup of shredded, unsweetned coconut in the blender. Â Let the water cool a bit because you don’t want to burn yourself. Add the water to blender and mix away for a few minutes. Pour mixture into a pitcher using a sieve to strain and you’ve got coconut milk!
While 2 to 1 ratio seems to be the standard, I added some more water to the pulp and got a little more out of the coocnut. You can dehydrate the leftover pulp to make coconut flour but I have not done that yet.
